These air fryer sweet potatoes are a breeze to make. In fact, just 3 easy steps are all you have to follow to make 'em and they turn out perfect every single time. They're crispy on the outside, fluffy and tender on the inside, and loaded with yumminess. I like to make 'em "loaded" and top them with some melty mozzarella cheese, a dollop of rich sour cream, a little bit of crispy bacon bits, and some fresh green onions. With that said though, they're really tasty with nothin' on them too.

Just a handful of simple things are all you'll need to whip this recipe up.
Anyway, here's everything you'll need for these air fryer sweet potatoes:
- 4 Small Sweet Potatoes, skin on
- ¼ cup Mozzarella Cheese, shredded
- 4 tbsp. Bacon Bits
- 4 tbsp. Sour Cream
- Green Onions
Yup, it's as simple as that!
Keep in mind you can customize your air fried sweet potatoes with any of your favorite toppings and seasonings. You don't have to use the same toppings that I like to use - I just usually like to make loaded sweet potatoes when I make 'em.
How to Air Fry Sweet Potatoes
As I alluded to earlier, this recipe is beyond simple to make. In fact, it's hardly a recipe at all!
Seriously, all you have to do is pop the sweet potatoes in the air fryer for about 40 minutes. Then, take them out and add your toppings. That's all there is to it.
I'm not kidding, it's really that effortless!
All in all, this recipe should only take about 50 minutes to make. And as you already know, most of that is just passive cook time.
So, let's hop to it!
Step 1: Prepare the Sweet Potatoes
First, wash the sweet potatoes thoroughly, scrubbing as needed.
Then, use a fork to pierce holes into each sweet potato, going about ¼ inch in.
Step 2: Air Fry the Sweet Potatoes
Next, preheat your air fryer to 350°F (180ºC) and bake sweet potatoes for 35-40 minutes.
For what it's worth, I don't recommend adding foil or parchment paper to the air fryer basket during this step. The hot air needs to circulate around the entire sweet potato for it to roast perfectly and adding those will just reduce the air flow.
Anyway, once your sweet potatoes are soft enough to easily poke through you can transfer them to a plate and get them ready for your toppings.
Step 3: Garnish the Sweet Potatoes
Finally, cut open your baked sweet potatoes and top them with shredded mozzarella, sour cream, bacon bits, and chopped green onions...or with whatever you like. Some butter and flakey salt are a good simple option too.
Serve 'em immediately on their own or with the main dish of your choice, and enjoy!

Ok, so these air fryer sweet potatoes are already pretty darn delicious on their own as a snack or appetizer. But also, they make a hearty and satisfying side dish for all kinds of meat.

How to Store Leftovers
So, this recipe makes 4 small sweet potatoes, which should be enough for 2-4 servings.
When I make these air fryer sweet potatoes at home, I usually like to make a few extra batches to store for later since they reheat so well. If you're planning to do that though, make sure not to add any toppings until right before you plan to serve them.
Anyway, to store your leftovers just transfer them to an airtight container and keep them in the fridge. Stored like this the sweet potatoes will last for 3-5 days.
Alternatively, you can freeze them for up to 6 months. To do that, wrap each individual sweet potato in foil and transfer them all into a freezer bag. Squeeze all the extra air out of the bag, and store it in the freezer.
Reheating The Sweet Potatoes
As you can probably guess, the best way to reheat your air fryer sweet potatoes is the same way you made them.
So, to reheat your potatoes, you can warm them back up in an air fryer preheated to 400°F (200ºC) for 3-5 minutes.
Also, keep in mind, you can drizzle your sweet potatoes with a little bit of olive oil or avocado oil before air frying them if they seem a little dry.
