    Peanut Butter Keto Mousse | Easy, Low Carb, & Sugar Free

    This Peanut Butter Keto Mousse Recipe is rich, creamy, and oh-so-delicious. And the best part is it's also incredibly easy to make! From start-to-finish, it takes just 15 minutes and requires a few simple keto friendly ingredients.

    Peanut Butter Keto Mousse

    Keto mousse is one of the quickest keto dessert recipes you can whip up.

    And one of the tastiest too.

    So, since I've already shown you how to make Chocolate Keto Mousse, it only makes sense to do peanut butter next. Because, well, peanut butter is probably my second favorite thing in this world behind chocolate.

    Don't worry though, you can easily add a keto friendly chocolate drizzle to this low carb peanut butter mousse. And if you do, you will end up with something that tastes like a Reese's, in mousse form.

    So, as I said earlier, this mousse is incredibly easy to make!

    There are very few steps - and ingredients - required to make this stuff, and in my opinion, that's always a HUGE plus.

    I mean, the best keto dessert recipes are quick and easy keto dessert recipes, right?!

    Right!

    Anyways, let's talk about what you'll need to make this low carb mousse.

    You'll need...

    • Heavy Whipping Cream
    • Room Temp. Cream Cheese
    • No Sugar Peanut Butter
    • Confectioners Swerve
    • PURE Vanilla Extract
    • & Salt

    Pretty standard keto ingredients!

    Now, here are the steps you'll need to follow to whip this stuff together...

    1. In a medium-sized bowl, beat the heavy whipping cream with a hand mixer until stiff peaks form and set aside.
    2. Now, in a large bowl add the rest of the ingredients, and again, beat these ingredients with a hand mixer until they combine.
    3. Once combined, add the whipped cream into your peanut butter mixture, and beat until well incorporated and smooth.
    4. Lastly, portion out the Keto Peanut Butter Mousse in 4 parfait cups, and keep refrigerated.
    5. Enjoy for several days.

    How easy is that?

    It's almost too easy.

    That said, I highly encourage you to make a keto chocolate drizzle for the top of the mousse.

    It takes practically no time at all to make, and it really takes this recipe to a whole other level.

    Make this Keto Peanut Butter Mousse as Low Carb As Possible

    Ok, so I have a few suggestions on how to keep the carbs as low as possible when you make this mousse.

    Peanut Butter

    First-and-foremost, make sure you use a No-Sugar-Added Peanut Butter. A lot of peanut butter's have added sugars, and you'll definitely want to avoid using those.

    Walmart actually sells a 1 net carb peanut butter, and this is about as low carb as peanut butter gets.

    So consider picking some of that stuff up, if you're trying to keep things as low carb as possible.

    Sugar Substitute

    Next, make sure you choose the right sugar substitute.

    I recommend using Confectioners Swerve. It has the same sweetness as sugar, except it has 0 calories and 0 carbs.

    If you don't use Swerve though, this Granulated Monk Fruit By Lakanto will work too.

    The only thing about using Lakanto though is that you'll want to blend it down into a powder before using it. Basically you're making it "confectioners" style instead of granulated. 

    Ok, so those are my suggested go-to's.

    A lot of people ask me about using Stevia, but I discourage using it.

    Most stevia blends are either not a 1:1 substitute with sugar - they're sweeter - or they're blended with sugar.

    Most of the time you'll see on the ingredient list it says dextrose, maltodextrin, maltodextrose, etc. and all of these are other words for sugar.

    That said if you find something that says 1:1 as sweet as sugar, and REALLY ISN'T blended with sugar, it will most likely work well for this Keto Peanut Butter Mousse Recipe.

    Chocolate Drizzle

    Ok, so, as I mentioned, this chocolate drizzle is the shizzle. 

    Oh man, that was bad.

    Of course, it's optional, but highly encouraged!

    All you need is 2 ingredients to make it ghee/butter, and keto chocolate chips. I like to use ghee because it's got a really fantastic nutty taste to it.

    As far as the chocolate chips go, my favorites are these semi-sweetened ones by Lilly's. They have 0 NET CARBS, and when you taste them, you'll wonder how that's even possible.

    That's how good they are.

    Ingredients

    Scale

    ½ Cup (120mL) Heavy Whipping Cream

    6 Oz (168g) Full-Fat Cream Cheese

    Heaping ⅓ Cup (96g) No Sugar Peanut Butter

    ⅓ Cup (50g) Confectioners Swerve

    ½ Tsp PURE Vanilla Extract

    Salt to taste

    OPTIONAL CHOCOLATE DRIZZLE:

    ½ Tsp (3g) Ghee/butter

    Heaping 1 Tbsp (14g) Keto Chocolate Chips

    Instructions

    In a medium-sized bowl, beat the heavy whipping cream with a hand mixer until stiff peaks form.

    Now, in a separate larger bowl, add the other ingredients, and use the hand mixer to beat them until smooth and combined.

    Once combined, add the whipped cream, and beat the cream into the peanut butter mixture until well incorporated.

    When the mixture is combined and smooth, portion it out into 4 parfait cups, and add the chocolate drizzle to each cup if you're making it.

    ***To make the drizzle, add the chocolate chips and the ghee to a small dish and microwave until the ghee melts - about 30 seconds.

    Mix with a spatula until a chocolate sauce forms.

    Refrigerate for up to several days.

    Notes

    The Macros DO NOT include the "carbs" from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list "sugar alcohols" as carbs, but that doesn't mean they should be tracked as such. That's why it's ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES
