Yes I've been on a protein truffle kick lately, (see here, here, and here) but I've also been on an overnight oats kick too. Oh, and by the way, I think I have a new favorite O.O. recipe now. That's because this banana bread overnight oats recipe just hits all the right spots. These oats literally have the perfect amount of sweetness, a lovely crunchiness from the pecans, and a wonderful creaminess from the mashed banana. I can't think of a better overnight oat recipe to wake up to in the morning...atleast for now.

Ingredients
- ½ Cup (120ml) unsweetened vanilla almond milk
- ½ Cup (40g) oats
- 2 Tbsp (15g) pecans
- ½ Tbsp (3g) ground flaxseeds
- ½ Tbsp (6g) chia seeds
- 2 Tbsp (30ml) low-calorie pancake syrup
- ½ Mashed banana (50g)
- ½ Tsp cinnamon
Instructions
- Put all the ingredients into a sealable jar
- Mix well
- Seal the jar for 6-8 hours

Made this, and liked it! Doubled the chia (didn't have flaxseed) and did walnuts instead of pecans (didn't have pecans!) First time trying overnight fridge oatmeal in a jar, and i was NOT disappointed. Definitely a repeater. THX! And I appreciate the nutritional info included!
