There are 2 ways you can bake this keto birthday cake recipe. You can cook it in the microwave, or in the oven.
If you use a microwave, the mug cake will only take about one minute to cook.
It is definitely the fastest and easiest way to make the cake.
So, to make this keto birthday cake mug cake in the microwave follow the steps below.
- Add all of the ingredients - sprinkles last - to a medium-sized bowl, and combine them with a spatula.
- Coat an 8oz ramekin with baking spray, and add the batter to the ramekin.
- Microwave for around 40-50 seconds. Microwave times will vary, but 40-50 seconds was perfect for my 1100 Watt microwave.
- You want the cake to look ever so slightly "wet" in the middle of the cake, so add 5-10 seconds of cook-time if needed.

You can substitute the cake batter extract with vanilla extract. But I would add a little extra Confectioners Swerve if you do.
