    An easy, low carb, keto birthday cake recipe made in a cup! And the best thing about this keto cake recipe is that 1 minute is all you need to make it. Plus, it tastes just like store-bought funfetti cake, except, obviously, it has way less carbs!

    The BEST EASY Keto Birthday Cake Recipe

    So, what makes this the best easy keto birthday cake recipe; you ask?!

    Well, it's made in 1 minute, it tastes like "regular" funfetti cake, and it has just 4g NET CARBS.

    Those are my top 3 reasons, but I have a few more too.

    This keto birthday cake recipe is also made in a cup - or mug - and it's meant to be a cake for one. So portion control is built right into the recipe. And ya'll know I'm all about recipes that have portion control.

    Also, simple everyday keto friendly ingredients is all you'll need to make this cake. The only special ingredient is keto sprinkles, but you can easily get those here.

    And the process for making this funfetti keto cake is about as quick and easy as it gets. Seriously, just add all of the ingredients to a bowl, mix, pour, and bake!

    Honestly, this is as easy as making a birthday cake gets.

    And I'm not just talking about keto birthday cakes, I'm talking about ALL birthday cakes.

    How To Make A Keto Birthday Cake Mug Cake

    So, the first thing we'll need to go over is the ingredients you'll need to make the cake.

    And, like I already alluded to, all of these ingredients are common low carb keto diet staples.

    Actually, there's a good chance you have all of these ingredients in your kitchen already. Especially if you've been following a ketogenic diet for a while.

    Then, after we talk about the ingredients, we'll talk about the cake making process itself.

    And, spoiler alert, it's a very simple and easy process!

    Ingredients For Today's Low Carb Birthday cake

    • 1 Egg
    • ½ tablespoon Salted Butter
    • 1 ½ tablespoon Unsweetened Vanilla Almond Milk
    • ¼ teaspoon Cake Batter Extract
    • ½ Cup Almond Flour
    • 3 Tbsps Confectioners Swerve
    • ½ teaspoon Keto Sprinkles
    • ½ teaspoon Baking Powder

    Optional Frosting Ingredients:

    • 1 Oz Full-Fat Cream Cheese
    • 1 ½ Tbsps Confectioners Swerve

    Baking This Low Carb Keto Birthday Cake In The Microwave

    There are 2 ways you can bake this keto birthday cake recipe. You can cook it in the microwave, or in the oven.

    If you use a microwave, the mug cake will only take about one minute to cook.

    It is definitely the fastest and easiest way to make the cake.

    So, to make this keto birthday cake mug cake in the microwave follow the steps below.

    1. Add all of the ingredients - sprinkles last - to a medium-sized bowl, and combine them with a spatula.
    2. Coat an 8oz ramekin with baking spray, and add the batter to the ramekin.
    3. Microwave for around 40-50 seconds. Microwave times will vary, but 40-50 seconds was perfect for my 1100 Watt microwave.
    4. You want the cake to look ever so slightly "wet" in the middle of the cake, so add 5-10 seconds of cook-time if needed.

    How To Make This Keto Chocolate Lava Mug Cake In The Oven

    So, if you don't like to use a microwave or own a microwave, the good news is you can cook this mug cake in the oven too.

    However, instead of the mug cake taking a minute to cook, it will take about 15-20 minutes.

    That said, you'll want to do just a couple of things different to make it in your oven.

    1. Pre-heat your oven to 350 Degrees F.
    2. Add all of the ingredients to a medium-sized bowl, and combine them with a spatula.
    3. Coat an 8oz ramekin with baking spray, and add all of the cake batter to the ramekin.
    4. Cook for 15-20 minutes

    Ingredients

    Scale

    1 Large Egg

    ½ tablespoon (7g) Salted Butter

    1 ½ Tbsps (21g) Unsweetened Vanilla Almond Milk

    ¼ Tsp Cake Batter Extract

    Just Less than ½ Cup (50g) Almond Flour

    3 Tbsps (27g) Confectioners Swerve

    ½ Tsp Baking Powder

    ½ Tsp Keto Sprinkles

    Keto Frosting:

    1 Oz (28g) Full-Fat Cream Cheese

    1 ½ Tbsps (15g) Confectioners Swerve

    Instructions

    1. Add all of the ingredients - sprinkles last - to a medium-sized bowl, and combine them with a spatula.
    2. Coat an 8oz ramekin with baking spray, and add the batter to the ramekin.
    3. Microwave for around 40-50 seconds. Microwave times will vary, but 40-50 seconds was perfect for my 1100 Watt microwave.

    Notes

    The Macros DO NOT include the “carbs” from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list “sugar alcohols” as carbs, but that doesn’t mean they should be tracked as such. That’s why it’s ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES!

    You can substitute the cake batter extract with vanilla extract. But I would add a little extra Confectioners Swerve if you do.
