Summer is right around the corner. So, that means ice cream season is almost here too.
And over the next few months, I'll be showing you how to make keto ice cream in a bunch of different flavors.
Having said that, I've already done a few super tasty keto ice creamm recipes like this strawberry one, this mint chocolate chip one, this butter pecan one, and this cookie dough one.
Today, though we're kicking things off with a super creamy, no churn, chocolate keto ice cream recipe.
And, in my totally biased opinion, this is actually one of the best low carb ice cream recipes I've ever tried!
FYI, I actually experimented with 7 different variations of this ice cream recipe before I settled on this one.
So, you could say I did my due diligence making sure this one truly is the best one.
Ingredients You'll Need
Ok, so to make this keto chocolate ice cream you'll only need a few common low carb ingredients.
Ingredients like:
- Heavy Whipping Cream
- Unsweetened Cocoa Powder
- Confectioners Swerve/Lakanto Monk Fruit (or Allulose for creamier ice cream)
- Vanilla Extract
Yep, 4 ingredients are all it takes to make this crazy good keto mason jar ice cream!
And making it is easy-peasy too.
Sweeteners To Use
Ok, so you may have noticed that I listed 3 keto sweetener options for sweetening this keto ice cream recipe - Confectioners Swerve, Confectioners Lakanto Monk Fruit, or allulose.
With that said, if you want your ice cream to be as creamy as possible I recommend using allulose. Unlike Swerve/Lakanto, allulose will keep the ice cream super creamy for days/weeks after you make it.
If you use Swerve/Lakanto, I recommend you only make enough ice cream for the day that you plan on eating it. Otherwise, the ice cream freeze's solid, and you'll have to let it thaw for up to an hour before it gets creamy/edible.
So, just keep that in mind when you're choosing a sweetener.
How To Make Keto Ice Cream (Video)
One of my favorite things about this low carb mason jar ice cream recipe is how easy it is to make.
Literally from start-to-finish, it takes just 5 minutes to whip up!
And that's not an exaggeration.
All you'll need to do is toss all the ingredients into a mason jar, shake them up, and freeze.
Speaking of freezing...this ice cream does need about 4-5 hours to freeze. But trust me it's totally worth the wait!

Ingredients
1 Cup (235mL) Heavy Whipping Cream
1 ½ Tbsps (7g) Unsweetened Cocoa Powder
2 ½ Tbsps (24g) Confectioners Swerve - or 4 Tbsps (48g) allulose
1 Tsp (3g) PURE Vanilla Extract
Instructions
Add all of the ingredients into a 24oz mason jar.
Shake until the whipping cream thickens up and approximately doubles in size.
Freeze for 4-5 hours (shaking the jar every hour for the first 2 hours).
Notes
The macros do not account for the "carbs" in confectioners swerve. There are NO CALORIES in Confectioners Swerve, so it's important that you track it as 0 CARBS.
The ice cream is BEST the day you make it.
Use allulose if freezing for more than 1 day. It will keep the keto ice cream creamier.
The ice cream may need up to 30 minutes to defrost depending on how frozen it is, so let it sit at room temp until it softens up to your liking.

I used the allulose in the ice cream. Is allulose carb free? Heard that the body doesn't absorb the carbs. Just curious.
