As for the vegetables, you can also use red bell pepper and yellow onion in place of the green and yellow peppers and white onion. Honestly though, you can really use any veggies you want, like cherry tomatoes, cabbage, cauliflower, or broccoli.
How To Cook Chicken and Bell Peppers

As I mentioned earlier, this recipe is as easy as it gets. All you have to do is sear the seasoned chicken and veggies on the stove for a few minutes, then put everything into the oven!
Anyway, let's stop wasting time and get cooking.
Step 1: Prepare The Ingredients
First things first, you'll want to preheat your oven to 400°F (200°C). Then, you'll want to put a large skillet over medium-high heat on the stove.
While the skillet is warming up, you can take out a large bowl and toss your chicken breasts with the olive oil, salt, ground black pepper, garlic powder, paprika powder, and Italian herbs. Make sure to give it all a good mix until the chicken is fully coated in the seasonings.
Step 2: Cook The Chicken and Vegetables
Once the oven-safe skillet is hot, you can add the seasoned chicken into the skillet and cook it for 3 minutes on each side. At this point, you're just looking to give the exterior of the chicken a nice golden brown sear, so it won't be fully cooked yet.
Anyway, once you're done searing the chicken, you can remove it from the skillet and then add the bell peppers, onions, garlic, salt, pepper, and red pepper flakes.
Now you'll want to toss everything together gently and cook for 1 minute, just so the garlic and onions are fragrant.
Step 3: Bake In The Oven
As soon as the veggies are good to go, you can place your seared chicken breasts on top of the peppers and onions and transfer the skillet into the oven. Or, if you aren't using an oven-safe pan, transfer the vegetables to a baking dish and place the chicken on top.
Now bake the chicken and peppers for 15 minutes or until the internal temperature of the chicken reaches 165°F at the thickest part.
Once everything is cooked, take the skillet - or baking dish - out of the oven and let the chicken rest for 5 minutes. Then finally, serve the chicken, peppers, and onions alone or with any sides that you want.
