    This hearty and savory chicken bacon ranch casserole recipe is the ultimate answer to the endless question of "what should we have for dinner?"

    It's a quick, easy, and delicious way to use up any leftover chicken in the fridge, a rotisserie chicken, or even that bag of frozen chicken breasts in the freezer.

    And it uses just a handful of common ingredients, is ready in about 30 minutes, and it tastes even better the next day!

    I mean, can you think of a more ideal weeknight dinner option? I can't!

    Seriously, this restaurant-quality chicken bacon ranch casserole is one of my favorite recipes and is sure to be a huge hit at the dinner table and probably a family favorite - all while being keto friendly and gluten free with only 2 net carbs per serving!

    Oh, and if you really want to take this meal to the next level, I recommend whipping up these low carb cheddar bay biscuits along with this easy recipe.

    Ingredients

    The ingredient list for this keto chicken bacon ranch casserole is pretty short and sweet.

    You only need 7 ingredients and they're all incredibly common kitchen staples, so there's a good chance you already have everything on hand!

    With that said, here's everything you'll need to make this chicken bacon ranch casserole recipe:

    • 4 cups cooked chicken breast, shredded
    • 8 slices of cooked bacon, chopped
    • 3 cloves garlic, minced
    • 1 cup Ranch dressing
    • 1 cup mozzarella cheese, shredded
    • 1 cup cheddar cheese, shredded
    • 5 cups fresh broccoli, cooked and cut into florets

    Now, as I mentioned earlier, you can use leftover chicken breasts, rotisserie chicken, or quickly cook up some frozen breasts with my Instant Pot shredded chicken recipe to put in the ranch chicken casserole.

    As for the ranch dressing, you can use any kind that you want, but if you're trying to keep this casserole low carb, make sure you check the nutrition label. Some ranch dressings can have hidden carbs in them, so you'll want to use one that is low in carbs. And you can also use ranch dressing mix instead.

    Oh, and if you have to pick up a bottle of ranch dressing for the store, you can use the rest of it to make this keto buffalo chicken dip or keto Instant Pot crack chicken!

    Modifying Your Chicken Bacon Ranch Casserole

    So, I think that boneless skinless chicken breasts are the best option for this chicken bacon casserole.

    But, I also like using rotisserie chicken if I want to speed up the recipe or don't have any pre-made chicken on hand. 

    Now, if you're ever not feeling the ranch flavor, you can also make this casserole with my low carb alfredo sauce for an easy and equally delicious switch-up. The alfredo sauce actually pairs incredibly well with all of the other flavors in this dish, so I highly recommend you give it a try sometime.

    Also, any extra vegetables you want to use up will also work great here. Cooked carrots, spinach, and peppers are all welcome additions to this casserole dish.

    With just a handful of steps to make this chicken bacon ranch casserole recipe, you'll have this soon-to-be family favorite ready in no time.

    As I mentioned, it only takes around 30 minutes from start to finish. And at most you'll need one bowl, one casserole dish, and a rubber spatula or spoon, so cleanup will be a breeze.

    Also, this chicken bacon ranch casserole can easily be prepared the night before and stuck in a preheated oven for about 15 minutes, making it a no-mess, no-fuss family dinner!

    Now, let's get into the details of this low carb chicken bacon ranch casserole recipe.

    Step 1: Prep the Casserole

    First things first preheat the oven to 375ºF (190ºC).

    Then, take out a large bowl and combine the cooked chicken breast, crispy bacon, cooked broccoli, minced garlic, and ranch dressing or ranch seasoning mix, along with half of the shredded cheddar cheese and mozzarella cheese.

    Now stir all of these ingredients together until everything is well incorporated.

    Step 2: Transfer the Casserole

    Next, spray a glass or stoneware casserole dish with non-stick baking spray.

    Transfer the casserole mix you just made to this prepared baking dish and top it with the rest of the shredded mozzarella cheese and cheddar cheese.

    Finally, bake your chicken bacon ranch casserole for about 15 minutes or until the cheese is melted and bubbly.

    In fact, I think this casserole tastes even better the next day! So it's perfect for a make-ahead dinner or a speedy meal prep. And that's why this is such a great recipe for a busy weeknight.

    Oh, and this recipe for ranch chicken casserole will make 6 servings, so if you want to have some on hand for the week, you might want to double or triple the recipe.

    You can store leftovers of this keto chicken bacon ranch casserole either in the casserole dish with a lid or in an airtight container in the refrigerator for about 4 days. And if you want to freeze it make sure the casserole is completely cooled and then store it in a freezer-safe bag - or airtight container - for up to 2 months.

    How to Reheat Chicken Bacon Ranch Casserole

    To reheat your leftovers, the best way is to pop them back in the oven. First, preheat the oven to 325ºF (160ºC) and then put the amount of leftovers you want to eat in an oven-safe dish.

    Then, heat for about 20-30 minutes or until the chicken casserole is warmed all the way through.

    With that said, if you want to reheat just a small portion, you can just pop it in the microwave for about 1 minute or until warm.

    Ingredients

    4 cups (32 oz.) Chicken breasts, cooked and shredded

    8 slices Bacon, cooked and chopped

    3 cloves Garlic, minced

    1 cup Ranch dressing

    1 cup Mozzarella cheese, shredded
