    THE BEST KETO STIR FRY 

    Low carb recipes that are quick and easy to make - like this keto chicken stir fry is - just come in the clutch on busy weeknights, or for meal prep. And this low carb stir fry recipe is about as quick and easy as it gets. And everything for this healthy and delicious meal cooks in just one pan, making for a simple cooking process and easy clean-up. 

    Plus, all it takes is about 20 minutes from start-to-finish to make this homemade keto stir fry

    Having said all of that, my favorite part about this healthy chicken stir fry recipe is the amount of flavor that's packed into it. The chicken is pan-fried to perfection, simmered with the fresh veggies, and then coated in a sweet and savory keto stir fry sauce that is out-of-this-world good.

    Now, as you probably know, stir fry usually has rice or noodles added to it, but this keto low carb version honestly doesn't even need them! But, if you want, you can add this cauliflower rice to it, and up the volume of the meal. Either way, this stir fry is fire!

    INGREDIENTS

    So, the ingredient list for this keto stir fry is pretty basic, and doesn't require anything you normally wouldn't see in a stir fry. 

    Here's everything you need:

    • ¾ lb. (350g) chicken breast,
    • 1 ½ red bell pepper, chopped
    • 1 cup broccoli florets, blanched 
    • 2 garlic cloves, minced
    • 1 tablespoon olive oil
    • chopped spring onions
    • toasted sesame seeds
    • Salt and pepper 
    • Keto Stir fry sauce (optional but recommended

    Now, you'll need a keto stir fry sauce to complete this recipe, and I have a pretty awesome one you can use. And it takes seconds to make with a few ingredients, so you'll want to whip that up first before diving into making this keto chicken stir fry.

     

    With that said, here's what you'll need to make the sauce:

    • ½ Cup coconut aminos soy sauce or soy sauce
    • 1 tablespoon garlic, mince
    • ¼ teaspoon red pepper flakes
    • 2 ½ tablespoon sesame oil
    • 1 ½ Tbsps confectioners swerve
    • Pinch of xanthan gum

    Just add all of the ingredients to a small bowl, and whisk until combined!

    SUBSTITUTIONS

    Now, this recipe makes a keto chicken stir fry, but you can turn it into a vegetable stir fry by leaving out the chicken, or switch the chicken out with beef! 

    And feel free to add in any more veggies that you want! Just add a small amount to keep it low carb.

    Here are some great keto stir fry vegetables to add in:

    • Cauliflower
    • Carrots
    • Spinach 
    • Zucchini
    • Asparagus
    • Mushrooms

    HOW TO MAKE KETO CHICKEN STIR FRY 

    The process of making this low carb stir fry recipe is as easy as it gets. 

    Honestly, it's almost as easy as ordering takeout or delivery! And it's way tastier too. 

    So, get all of your ingredients together, and let's make some stir fry keto friendly!

    STEP 1: COOKING THE CHICKEN

    Before you do anything else, make the keto stir fry sauce and set it aside, so it's ready to go for later. 

    Now, take out a frying pan, add some olive oil to it, and put it over medium high heat. Then, cut the chicken breasts into strips and add them to the pan. 

    Fry the chicken for about 5-7 minutes without moving them, then flip and cook for another 5 minutes or until the chicken is golden brown and reaches an internal temp of 165°F (75°C). 

    And while the chicken is cooking, you can steam the broccoli. 

    STEP 2: STEAMING THE BROCCOLI

    First, cut the broccoli into florets, and place them in a steamer basket over a pot with 1 inch of water in it.

    Then bring the water to a simmer, cover the broccoli, and let it steam for 5 minutes or until the broccoli is tender.

    STEP 3: COMBINING THE INGREDIENTS

    Once the chicken is cooked, drizzle 2 tablespoons of the stir fry sauce over it, then set it aside.

    Next, put the chopped bell peppers and minced garlic in the pan the chicken was just in. 

    Simmer these ingredients for a few minutes, then add the steamed broccoli & chicken back to the pan, and combine everything with as much of the stir fry sauce as you want.

    Lastly, serve this keto stir fry with some chopped spring onions and toasted sesame seeds on top, and enjoy!

    STORING KETO STIR FRY

    I love to make keto chicken stir fry for dinner and for meal prep since it stores so well. And it tastes super delicious leftover, either cold or reheated. 

    With that said, this healthy stir fry recipe will make 4 servings. So, if you're making it for yourself, you'll have plenty leftover. And the good news is you can store it in an airtight container in the refrigerator for about 3-4 days. 

    And if you want to make a bigger batch to have this low carb stir on hand at all times, you can store it in a freezer-safe bag for up to 3 months!

    REHEATING KETO STIR FRY

    If you're reheating the stir fry from the fridge, just put it back in a pan with a touch of oil over medium high heat.

    Heat it for a couple of minutes, making sure to stir frequently. And if the stir fry sauce is too thick, just add a little water to the pan.

    Now, if you're reheating the keto stir fry while it's still frozen, you'll want to thaw it in the refrigerator the night before you plan on eating it. Then, you can reheat it the same way as above, in a pan on the stovetop.

    Well, that is how to make stir fry keto friendly!

    Honestly, even people who aren't following the keto diet love this recipe when I make it for them.

    Ingredients

    ¾ lb. (350g) chicken breast,

    1 ½ red bell pepper, chopped

    1 cup broccoli florets, blanched 

    2 garlic cloves, minced

    1 tablespoon olive oil

    chopped spring onions

    toasted sesame seeds

    Salt and pepper 

    *Optional Stir fry sauce:

    • ½ Cup (120mL) coconut aminos soy sauce or soy sauce
    • 1 tablespoon garlic, mince
    • ¼ teaspoon red pepper flakes
    • 2 ½ tablespoon (35g) sesame oil
    • 1 ½ Tbsps (15g) confectioners swerve
    • Pinch of xanthan gum

    Instructions

    1. Make the keto stir fry sauce and set aside.
    2. Cut chicken into slices. Add olive oil to a pan, put it over medium high heat, and add chicken to it.
    3. Fry chicken for 5-7 minutes on each side or until browned. When the chicken is almost done cooking, add 2 tablespoons of stir fry sauce to it.
    4. While chicken is cooking, steam the broccoli.
    5. Set chicken aside. Put the chopped bell peppers and minced garlic in the pan the chicken was in. Simmer for a few minutes, then add the chicken and broccoli. 
    6. Add as much of the stir fry sauce as you want and stir to combine.
    7. Serve with chopped spring onions and toasted sesame seeds on top and enjoy!
