This keto stir fry is an easy and delicious meal that takes under 20 minutes to make. It's filled with chicken, fresh veggies, and a flavorful keto stir fry sauce, all for just 2 NET CARBS!

A cast iron pan filled with chicken stir fry.

Low carb recipes that are quick and easy to make - like this keto chicken stir fry - just come in the clutch on busy weeknights or for meal prep. And this low carb stir fry recipe is about as quick and easy as it gets. And everything for this healthy and delicious meal cooks in just one pan, making for a simple cooking process and easy clean-up.

My favorite part about this healthy chicken stir fry recipe is the amount of flavor that's packed into it. The chicken is pan-fried to perfection, simmered with fresh veggies, and then coated in a sweet and savory keto stir fry sauce that is out-of-this-world good. It's even better eaten with my keto cauliflower rice!

    INGREDIENTS

    For the stir fry:

    • Chicken breast
    • Red bell pepper- chopped to any size you want. I like to cut it into cubes.
    • Broccoli florets- blanched to help it cook better.
    • Garlic cloves- minced for more flavor.
    • Olive oil
    • Chopped spring onions
    • Toasted sesame seeds
    • Salt and pepper
    • Other veggies you can add- cauliflower, carrots, spinach, zucchini, asparagus, mushrooms.

For the keto stir fry sauce:

    • Coconut aminos- or soy sauce.
    • Minced garlic
    • Red pepper flakes- for some spice. You can leave it out if you want.
    • Sesame oil
    • Confectioners swerve- my secret ingredient to add some sweetness.
    • Pinch of xanthan gum- for a slightly thick texture.

By the way, if you have any leftover chicken, give my blackened chicken recipe, creamy keto chicken thighs, keto chicken nuggets, or my air fryer chicken breast recipe a shot next. It's super easy to make too - just 15 minutes is all you need to whip it up.

And for another tasty stir fry recipe, take a look at this shrimp stir fry. If you put it over some cauliflower rice it ends up being quite a low carb dinner option as well.

A white plate with chicken in it, a cup of broccoli, a cup of sliced red bell peppers, a plate with minced garlic on it, a bowl half filled with salt and half with pepper and a bowl of sesame seeds all on a grey counter.

HOW TO MAKE KETO CHICKEN STIR FRY

A skillet filled with sliced pieces of chicken.

    Step 1: Cooking The Chicken

Before you do anything else, make the keto stir fry sauce and set it aside so it's ready to go for later. Now, take out a frying pan, add some olive oil to it, and put it over medium high heat. Then, cut the chicken breasts into strips and add them to the pan. Fry the chicken for about 5-7 minutes without moving them, then flip and cook for another 5 minutes or until the chicken is golden brown and reaches an internal temp of 165°F (75°C).

    Step 2: Steaming The Broccoli

First, cut the broccoli into florets, and place them in a steamer basket over a pot with 1 inch of water in it. Then bring the water to a simmer, cover the broccoli, and let it steam for 5 minutes or until the broccoli is tender.

Skillet filled with sliced red bell peppers and minced garlic. Behind the skillet is a cup of broccoli and part of a plate with cooked chicken on it.

    Step 3: Combining The Ingredients

Once the chicken is cooked, drizzle 2 tablespoons of the stir fry sauce over it, then set it aside. Next, put the chopped bell peppers and minced garlic in the pan the chicken was just in.  Simmer these ingredients for a few minutes, then add the steamed broccoli & chicken back to the pan, and combine everything with as much of the stir fry sauce as you want. Lastly, serve this keto stir fry with some chopped spring onions and toasted sesame seeds on top, and enjoy!

How To Store and Reheat Leftovers

I love to make this for dinner and meal prep since it stores so well. And it tastes super delicious leftover, either cold or reheated. You can store it in an airtight container in the refrigerator for about 3-4 days. And if you want to make a bigger batch to have this low carb stir on hand at all times, you can store it in a freezer-safe bag for up to 3 months! If you're reheating the stir fry from the fridge, just put it back in a pan with a touch of oil over medium high heat. Heat it for a couple of minutes, making sure to stir frequently. And if the stir fry sauce is too thick, just add a little water to the pan. Now, if you're reheating it while it's still frozen, you'll want to thaw it in the refrigerator the night before you plan on eating it. Then, you can reheat it the same way as above, in a pan on the stovetop.
