INGREDIENTS
For the stir fry:
- Chicken breast
- Red bell pepper- chopped to any size you want. I like to cut it into cubes.
- Broccoli florets- blanched to help it cook better.
- Garlic cloves- minced for more flavor.
- Olive oil
- Chopped spring onions
- Toasted sesame seeds
- Salt and pepper
- Other veggies you can add- cauliflower, carrots, spinach, zucchini, asparagus, mushrooms.
For the keto stir fry sauce:
- Coconut aminos- or soy sauce.
- Minced garlic
- Red pepper flakes- for some spice. You can leave it out if you want.
- Sesame oil
- Confectioners swerve- my secret ingredient to add some sweetness.
- Pinch of xanthan gum- for a slightly thick texture.

HOW TO MAKE KETO CHICKEN STIR FRY
Step 1: Cooking The Chicken
Before you do anything else, make the keto stir fry sauce and set it aside so it's ready to go for later. Now, take out a frying pan, add some olive oil to it, and put it over medium high heat. Then, cut the chicken breasts into strips and add them to the pan. Fry the chicken for about 5-7 minutes without moving them, then flip and cook for another 5 minutes or until the chicken is golden brown and reaches an internal temp of 165°F (75°C).
Step 2: Steaming The Broccoli
First, cut the broccoli into florets, and place them in a steamer basket over a pot with 1 inch of water in it. Then bring the water to a simmer, cover the broccoli, and let it steam for 5 minutes or until the broccoli is tender.
Step 3: Combining The Ingredients
Once the chicken is cooked, drizzle 2 tablespoons of the stir fry sauce over it, then set it aside. Next, put the chopped bell peppers and minced garlic in the pan the chicken was just in. Simmer these ingredients for a few minutes, then add the steamed broccoli & chicken back to the pan, and combine everything with as much of the stir fry sauce as you want. Lastly, serve this keto stir fry with some chopped spring onions and toasted sesame seeds on top, and enjoy!
How To Store and Reheat Leftovers
I love to make this for dinner and meal prep since it stores so well. And it tastes super delicious leftover, either cold or reheated. You can store it in an airtight container in the refrigerator for about 3-4 days. And if you want to make a bigger batch to have this low carb stir on hand at all times, you can store it in a freezer-safe bag for up to 3 months!If you're reheating the stir fry from the fridge, just put it back in a pan with a touch of oil over medium high heat. Heat it for a couple of minutes, making sure to stir frequently. And if the stir fry sauce is too thick, just add a little water to the pan. Now, if you're reheating it while it's still frozen, you'll want to thaw it in the refrigerator the night before you plan on eating it. Then, you can reheat it the same way as above, in a pan on the stovetop.

Ingredients
¾ lb. (350g) chicken breast,
1 ½ red bell pepper, chopped
1 cup broccoli florets, blanched
2 garlic cloves, minced
1 tablespoon olive oil
chopped spring onions
toasted sesame seeds
Salt and pepper
*Optional Stir fry sauce:
- ½ Cup (120mL) coconut aminos soy sauce or soy sauce
- 1 tablespoon garlic, mince
- ¼ teaspoon red pepper flakes
- 2 ½ tablespoon (35g) sesame oil
- 1 ½ Tbsps (15g) confectioners swerve
- Pinch of xanthan gum
Instructions
- Make the keto stir fry sauce and set aside.
- Cut chicken into slices. Add olive oil to a pan, put it over medium high heat, and add chicken to it.
- Fry chicken for 5-7 minutes on each side or until browned. When the chicken is almost done cooking, add 2 tablespoons of stir fry sauce to it.
- While chicken is cooking, steam the broccoli.
- Set chicken aside. Put the chopped bell peppers and minced garlic in the pan the chicken was in. Simmer for a few minutes, then add the chicken and broccoli.
- Add as much of the stir fry sauce as you want and stir to combine.
- Serve with chopped spring onions and toasted sesame seeds on top and enjoy!
