    This homemade ground chorizo recipe is simply the best. Not only is it quick and effortless to make, but it's just so incredibly flavorful too.

    Now, it's important to note that this is a recipe for ground Mexican-style chorizo. You don't want to get it confused with Spanish chorizo sausage, which is a dried and cured pork sausage that's used more like a cold cut.

    Mexican chorizo is a raw, fresh sausage that has to be boiled, fried, or grilled before serving. It's a slightly spicy sausage that's used in anything from tacos to scrambled eggs to hash. Today though, we're making some chorizo tacos out of it.

    Now, you might think making chorizo from scratch is super complicated. But, it's actually super easy. Just a handful of easy-to-find ingredients are all you need to make it and then everything cooks up in just 15 minutes.

    Honestly, this Mexican chorizo recipe is one of the easiest, tastiest, and most versatile ground pork recipes you can make. It's just as good on its own as it is in a breakfast casserole, in low carb tortillas, or mixed with some cauliflower rice.

    Ingredients

    All you need to make this Mexican chorizo recipe is some ground meat, vinegar, and a handful of spices. And, the best part is that you probably have most - if not all - of these in your kitchen already. But, if you don't, all of these ingredients should be readily available at your local grocery store.

    Anyway, here's everything you need to make this chorizo recipe:

    • 1 lb. ground  pork meat
    • 1 tbsp. paprika
    • 1 tbsp. taco seasoning mix
    • 1 tsp. cumin
    • 1 tsp. garlic powder
    • 1 tsp. cinnamon
    • 2 tbsp. red wine vinegar
    • Salt and pepper to taste

    That's all you need!

    Ingredient Substitutions & Suggestions

    Now, just so you know, you can make this chorizo recipe with ground beef instead of ground pork, or you can even use a mix of ground pork and ground beef.

    Honestly, you can even use ground chicken or turkey to make the chorizo! Of course, if you do, it won't be authentic. But, trust me, it is still guaranteed to taste fantastic.

    As for the taco seasoning, you can use store-bought taco seasoning packets, or you can make the seasoning from scratch with my taco seasoning recipe.

    Now, the heat for this recipe comes from the cayenne powder in the taco seasoning mix, but if you have Ancho chile powder - or chile peppers - they'd be a fantastic way to kick up the heat even more.

    By the way, you can use a lot of these same ingredients for this taco soup recipe and this taco casserole. So, be sure to take a look at those recipes next if you end up with some extras.

    How to Cook Mexican Chorizo

    As I mentioned several times now, this Mexican chorizo recipe is as easy as it gets. 

    Seriously, cooking chorizo has never been easier. I mean, from start to finish, the whole recipe only takes about 15 minutes and 2 easy steps are all you need to follow to make it.

    Now, just so you know before you make it, this recipe will make enough for about a ½ cup worth of cooked chorizo. However, if you want more, you can easily double or triple the recipe

    Anyway, let's not waste any more time and dive into how to make it!

    Step 1: Make the Fresh Chorizo

    First, take a large mixing bowl and add in your ground pork.

    Then, pour in the vinegar, followed by all the seasonings - the paprika, taco seasoning, cumin, garlic powder, and cinnamon.

    Next, put on some clean gloves - or use clean hands - and mix the seasonings into the meat until everything is well combined.

    Step 2: Cook the Chorizo

    Now, once everything is nicely mixed, add some oil to a skillet and bring it to medium-high heat on the stove.

    Then, crumble the seasoned ground pork and add it to the skillet with the hot oil. Now cook the Mexican chorizo for 8-10 minutes - stirring occasionally - until the pork is cooked through.

    Finally, serve your chorizo hot with tortillas, salsa, and cilantro, and enjoy!

    What to Do With Chorizo

    I love eating this fresh chorizo over some toasted tortillas, with fresh cilantro and homemade salsa. But there are a ton of other delicious and easy recipes you can make with this chorizo!

    Here are some ideas to get you started:

    • Huevos Rancheros - Add your cooked chorizo to this classic Mexican breakfast of fried eggs, and fresh salsa served over a corn tortilla
    • Huevos con Chorizo (Chorizo and Eggs) - Cook the chorizo until the fat melts, then make scrambled eggs in the same pan.
    • Frijoles con Chorizo (Chorizo Beans) - Fry the chorizo in a pan, then add refried beans for this meaty, hearty side dish.
    • Papas con Chorizo (Chorizo and Potatoes) - For this Mexican take on sausage hash, pan fry cubes of potatoes until crispy, then cook chorizo and combine the two in the same pan.
    • Chorizo Burgers - Mix the seasoned ground pork with ground beef for some insanely juicy and flavorful burger patties.

    How to Store Cooked Chorizo

    This recipe for chorizo will make about 4 servings, so you should have plenty for your meal along with some leftovers.

    As far as the leftovers go, you can store any leftover chorizo you have in an airtight container in the fridge for about 4 days.

    However, if you want to keep it around longer, you can also freeze it in a freezer-safe bag for up to 2 months. A pro-tip here is to flatten your chorizo in the freezer bag while you freeze it. Just lay the bag flat on a baking sheet as it freezes. This way you'll have a much easier time thawing it for later use.

    How To Reheat Cooked Chorizo

    To reheat your chorizo, just warm it up on the stovetop in a pan set over low heat until hot. Just make sure you stir it occasionally so the chorizo can reheat evenly. 

    With that said, if you want to warm up the chorizo even faster, you can also warm it up in the microwave in 30-second increments. Just stir between each one to make sure it heats up evenly.
