HOW TO MAKE KETO BREAKFAST CASSEROLE
This keto breakfast casserole is pretty easy to make, considering the incredible result.
And since it is so simple and delicious, I have a feeling this will become one of your stable keto breakfast recipes - at least it has for me!
Now get out all of your ingredients, and let's get into making this keto breakfast casserole.
STEP 1: SAUTEING
First, before you get into this sausage egg and cheese breakfast casserole, preheat the oven to 350 degrees Fahrenheit (180°C).
Then take out a large pan, coat the surface with olive oil, and add the minced garlic, followed by the sausages.
Cook the Italian sausage over medium-high heat until it has started to brown, then break it up to make sausage crumbles.
Next, add the diced red and yellow bell peppers to the pan and cook for a few minutes.
While the sausage mixture is cooking, blanch the fresh spinach in salted water, drain the water, and roughly chop the spinach.
Then add the blanched spinach to the pan along with the chopped parsley, salt, and pepper. Give everything in the pan a mix to combine and transfer it all to a baking dish or casserole dish.
STEP 2: FINISHING THE CASSEROLE & BAKING
Now, add all of the eggs to a large mixing bowl and beat with a hand mixer until the whites combine with the yolks.
Then add the heavy cream and mix to combine it with the eggs, and pour the egg mixture over everything in the casserole dish.
Next, bake for about 20-25 minutes, and remove the casserole dish from the oven 5 minutes before the time is up. Sprinkle the casserole with cheddar cheese and return it to the oven to finish baking until the shredded cheese melts.
And once it does, take your low carb breakfast casserole out of the oven, decorate it with some fresh parsley if you want, slice it into squares, and enjoy!
STORING KETO BREAKFAST CASSEROLE
My favorite part about this recipe keto breakfast casserole is it makes 12 servings.
So not only is it perfect for feeding a lot of people if you're hosting, but it makes for a convenient quick breakfast that you can reheat throughout the week!
You can either cover your baking dish with a lid or transfer the casserole to airtight containers, and you can refrigerate it for up to 5 days.
Then to reheat it quickly, put a square in the microwave for about 30 seconds or until warm. Or you can put the dish back in the oven at 350°F for about 10 minutes or until it reaches your desired temperature.
FREEZING THE CASSEROLE
If you want to keep this casserole for longer, so you have a hearty keto breakfast option on hand, you can store it in airtight containers in the freezer for up to 2 months.
Then when you know you'll want a slice the next day, just transfer it to the fridge and let it thaw overnight.
And to reheat, you can either microwave or heat it in the oven the same as above.

Ingredients
Just under 1lb. (400g) pork sausages
½ red bell pepper, finely diced

Instructions
- Preheat oven to 350°F (180°C).
- Coat the surface of a pan with olive oil and put it over medium-high heat. Add minced garlic and sausages and cook until the sausages brown.
- Add red and yellow bell peppers and cook for a few minutes.
- Blanch fresh spinach in salted water, drain and chop it roughly.
- Add blanched spinach to the mixture with sausages and peppers, add chopped parsley, salt, and pepper.
- Transfer the mixture to a baking dish.
- Beat the eggs with a hand mixer, add heavy cream and mix well. Pour into the baking dish and place in the oven.
- Bake for 20-25 minutes, and 5 minutes before the end, remove the baking dish from the oven, sprinkle with cheddar cheese, and return to the oven until the cheese melts.
- Decorate with fresh parsley and serve. Enjoy!
