There are tons of ways you can cook chicken sausage, but roasting them in the oven is - in my opinion - the best way to cook 'em.
And I especially love cooking chicken sausage in the oven over a bed of vibrant peppers and flavorful onions. All of the flavors just combine together to take the deliciousness of every component to a whole other level.
Honestly, the smell alone is enough to get your mouth watering!
Also, another thing I love about cooking sausage like this is that clean-up is a breeze. Since everything is prepped - and cooked - in one pan there's hardly anything to clean up after you make 'em this way. And I'm a huge fan of that.
I'm also a huge fan of the fact that 10 minutes of prep is all it takes to put this recipe together and then the oven takes care of the rest.
By the way, since you'll have some time on your hands as the chicken sausage cooks in the oven, you can use that time make some delicious side dishes. - ½ Red Bell Pepper, sliced
- ½ Green Bell Pepper, sliced
- ½ Yellow Bell Pepper, sliced
- ½ Red Onion, sliced
- 1 Garlic Clove, sliced
- 2 tbsp. Italian Seasoning
- 2 tbsp. Olive Oil

Also, don't worry if you're missing one or two of the colors of bell peppers listed. Any kind of bell peppers you have on hand will work in a pinch.
In fact, you can even add whatever vegetables you have on hand. Asparagus, green beans, broccoli, cabbage, and brussels sprouts are just some of the veggies you can add to the sheet pan veggie mix!
As for the chicken sausages, you can use any variety of chicken sausage you like. The seasonings here are versatile enough to work with anything from spicy Italian sausage to applewood smoked or Andouille. You can even use turkey sausage!
By the way, make sure you bake uncooked sausages. Pre-cooked sausage will finish cooking faster than the vegetables.

How to Cook Chicken Sausage in the Oven
Again, this recipe is probably one of the easiest - and most delicious - ways to cook chicken sausages in the oven.
Once you've prepped and arranged your chicken sausages and veggies on the sheet pan, all that's left to do is slide them into the oven and bake!
All told, this recipe takes about 45 minutes from start to finish, with only 10 minutes of that needed for prep.
I've also included instructions for an air fryer version for smaller batches.

Step 1: Prepare the Ingredients
First, preheat the oven to 350°F (180ºC).
Next, line a baking sheet with parchment paper or spray it with baking spray.
Then, slice up your veggies and toss them in a bowl with the olive oil and Italian seasonings to get them evenly coated.

Now arrange everything on the baking sheet and add the sausages. Also, make sure to get them coated with some of the oil and seasonings too.

Making Chicken Sausage in the Air Fryer
If you're cooking chicken sausage and peppers for just 1-2 people, you can also make this recipe in the air fryer!
To do that, preheat your air fryer to 325°F (160ºC). And, if you want, for easier clean-up you can also line the air fry basket with parchment paper after preheating.
Now, oil and season the veggies and chicken sausages, and then place them in an even layer in the air fryer. Cook 'em for 20 minutes or until the sausages are fully cooked.
How to Store Cooked Chicken Sausage
So, this recipe for baked chicken sausages makes enough for 4 servings. So it's great for a family dinner or meal prep for the week!
With that said, if you happen to find yourself with leftovers, they'll keep well in an airtight container in the fridge for 3-4 days.
You can also freeze everything in a freezer-safe bag for about 2 months.

Just place them in a baking sheet lined with parchment paper and cook them in the oven at 400°F (200ºC) for around 10-15 minutes - or until warmed through.
