This recipe combines a soft and chewy chocolate chip cookie with a decadent fudgy brownie to create a dessert that is so much better together than separate.
And what really sets this easy brookie recipe apart is instead of being high carb and loaded with sugar, these are sugar free, gluten free, and keto brookies. Honestly, you'd never be able to tell these we're healthy brookies though. They taste just like "normal" ones.
INGREDIENTS
Another reason to love this recipe is that it uses the same ingredients for both the brownie and cookie!
So if you don't have everything you need already, you'll only have to pick up a couple of ingredients to use for the entire recipe.
Here's what you'll need for the chocolate chip cookies:
- 1 tablespoon butter, melted
- ¼ teaspoon vanilla extract
- ¼ Cup almond flour
- 1 tablespoon confectioners erythritol (I used Swerve)
- 1 ½ - 2 Tbsps sugar free chocolate chips
And for the brownies:
- 3 Tbsps sugar free chocolate chips
- 1 ½ tablespoon butter
- ¼ Cup almond flour
- 1 tablespoon confectioners erythritol

HOW TO MAKE BROOKIES
So, as I mentioned earlier, this easy brookie recipe literally takes under 5 minutes from start to finish!
And for a quick and easy keto dessert, the result is pretty incredible. You end up with two brownie cookie bars that taste like they were made at a bakery.
Ok, I know by now you're dying to eat these, so let's get right into the recipe!
STEP 1: MAKING THE COOKIE
First, add the almond flour, sugar free chocolate chips, and confectioners swerve to a small bowl, and mix them until combined.
Then, add the melted butter and vanilla extract, and mix everything together until a cookie dough forms. By the way, make sure the butter isn't too hot when adding it otherwise you'll melt the chocolate chips.
Anyway, once you have formed a ball of cookie dough, refrigerate it, and start working on the brownie portion of the brookie.
STEP 2: MAKING THE BROWNIE
So, to make the brownie, first, add the almond flour and confectioners swerve to a small bowl, and give them a little mix to combine.
Next, take out a small microwave-safe bowl and add the chocolate chips and butter to it. Then microwave for about 15 seconds - or until the chocolate chips and butter are melted completely.
Once melted, stir the chocolate and butter together, and add them to the bowl of dry ingredients. Then, mix everything together until a brownie batter forms. Next, set aside a quarter of the brownie dough for later, and form the rest of the brownie into a rectangle.
STEP 3: FORMING THE BROOKIES
Now that you have the cookie dough and brownie batter/dough it's time to make the brookies.
So, what you'll want to do, is add the cookie dough on top of the brownie dough, and form a 6-inch by 2-inch rectangular brookie out of them.
Then, you can add some more chocolate chips to the top of the cookie dough - this is optional, but encouraged - and then you can add the extra brownie dough from earlier to the top of the cookie portion. And you can add it wherever you want - it's just to give the brookie square a true look.
STEP 4: COOKING THE BROOKIES
So, since this recipe uses no eggs, you can dig right in and eat these as no bake brookies. But, if you want that hot out-of-the-oven experience, I suggest cooking it in the microwave or oven.
For the quickest method, microwave the brookies in 2, 30-second intervals. Then cool for a second and dig in.
Or you can bake the brookies in the oven. To do this, bake at 325 degrees Fahrenheit (160°C) for about 10-12 minutes. Then, take them out, and let them cool down on the pan for a little before eating.
However you decide to eat these brookies, they'll blow your mind by delicious they are - enjoy!
STORING THE BROOKIES
So, as you know by now, this brookie recipe will make 2 squares of brownie cookie deliciousness. And trust me, you'll want to both squares right after you make them.
But if you end up saving a square, you can wrap it up in plastic wrap or put it in an airtight container and refrigerate it for up to 3 days.
Then, whenever you want this sweet treat, take it out and enjoy it chilled or microwave for a few seconds to warm it up!

Ingredients
Chocolate chip cookies:
1 tablespoon (15g) salted butter, melted (but not too hot)
¼ teaspoon vanilla extract
¼ Cup (25g) almond flour
1 tablespoon (12g) confectioners erythritol
1-2 Tbsps (5-10g) sugar free chocolate chips
Brownies:
3 Tbsps (15g) sugar free chocolate chips
1 ½ tablespoon (20g) salted butter
¼ Cup (25g) almond flour
1 Tbsp (10g) confectioners erythritol
Instructions
- To make the cookies, add the almond flour, sugar free chocolate chips, and confectioners erythritol to a small bowl and mix.
- Pour in the melted butter and vanilla extract, mix until a cookie dough forms, and put it in the fridge when you make the brownies.
- For the brownies, add the almond flour and confectioners erythritol to a small bowl, and mix.
- Add the chocolate chips and butter to a separate bowl and microwave for 15 seconds - or until melted. Stir the chocolate and butter together to form a chocolate sauce, then add it to the bowl of dry ingredients, and mix until they combine.
- Set aside about ⅕th of the brownie to use later.
- Form the rest of the brownie into a rectangle, then add the cookie dough on top of it. Press out the dough until it is a 6-inch by 2 inch rectangle.
- Add more chocolate chips to the top of the cookie dough along with the leftover brownie dough from earlier.
- You can eat the brookie immediately as a no bake brookie, or you can warm the brookies up.
- Microwave in 2, 30-second intervals or bake at 325°F (175°C) for 10-12 minutes.
