    Keto Apple Crumble Spice Cake | Low Carb, Sugar Free & Gluten Free

    This 5 minute keto apple crumble spice cake is delightfully soft with a delicious brown sugar crumble and perfect apple spice flavor. It tastes far from sugar free, and this entire keto mug cake has only 4 NET CARBS!

    THE BEST KETO SPICE CAKE

    If you've missed eating apples and like desserts with apple spice flavors, you're going to love this easy keto mug cake. 

    The cake has a tender crumb and is incredibly moist with the perfect amount of apple flavor. And the brown "sugar" crumble on top just melts in your mouth and has a wonderful blend of warm spices that compliment the sweetness of the cake incredibly well.

    Plus, this sugar free cake recipe tastes so much like a regular spice cake that you'd never guess it has only 4 NET CARBS. And that's for the entire keto mug cake! Yep, crumble and all.

    Best of all though is the fact that this gluten free spice cake takes under 5 minutes to make! Honestly, it might be one of the best quick & easy keto fall desserts you can make. I'd put it up there next to my 5 Minute Keto Pecan Pie. And that recipe is pretty darn ridiculous.

    INGREDIENTS

    Ok, so, to make this sugar free mug cake, you'll need some super simple keto baking ingredients. But, you'll also need a couple that are unique to getting the warm spice flavors every good apple crumble cake has. 

    Anyway, here's what you'll need for the keto apple spice cake:

    • Heaping ⅓ Cup Almond Flour
    • 2 Tbsps Confectioners Swerve
    • ½ teaspoon Baking Powder
    • Pinch of Cinnamon, Nutmeg, & Allspice
    • 1 Egg, whisked
    • ½ tablespoon Melted Salted Butter
    • ½ teaspoon Vanilla Extract
    • ¼ teaspoon Apple Extract

    And for the sugar free crumble: 

    • 1 ½ Tbsps Almond Flour
    • 1 ½ Tbsps Brown Swerve
    • ½ tablespoon Melted Salted Butter
    • Pinch of Cinnamon, Nutmeg, Allspice

    FLOURS TO USE FOR THIS KETO CAKE

    Ok, so as you may have noticed, we'll will be using almond flour to not only make this a keto cake, but also a gluten free cake too.

    And, I like to use almond flour in most of my cake recipes for two main reasons. Number one, it has the lowest amount of carbs in any flour. And, number two, almond flour always works perfectly as the main ingredient in low carb cake recipes because it gives them a perfectly soft and moist texture.

    However, if you want some substitutions, you can use an equal amount of walnut flour and sunflower seed flour. Both have the same properties as almond flour and will keep the right texture of the cake.

    With that said, a flour that you DO NOT want to use is coconut flour. It is a more absorbent flour and therefore is not an equal substitute for almond flour. So, your cake will turn out super dry if you use it, and we don't want that.

    MAKING THIS A SUGAR FREE CAKE

    One of my favorite components of this sugar free cake recipe is the sweetness that balances out the warm spices. 

    And to give the cake a little sweet taste, I used Confectioners Swerve for the cake, and Brown Swerve for the crumble on top. I like to use Swerve because it has 0 calories, 0 sugars, and is just as sweet as sugar.

    Another sweetener option that you can use is an equal amount of Lakanto's Powdered Monk Fruit Sweetener for the cake and Lakanto's Golden Sweetener for the crumble. Although the golden sweetener won't work as well as the Brown Swerve, your cake will still be delicious and sugar free!

    HOW TO MAKE KETO APPLE CRUMBLE SPICE CAKE

    The process of making this keto cake is probably one of the easiest one you'll find. 

    All you have to do is a little mixing and microwaving - that's seriously it - and the whole process will take 5 minutes! So you'll have this warm keto treat ready to eat in no time. 

    Now, get out your ingredients, and let's make this low carb keto cake!

    STEP 1: MAKING THE CAKE BATTER

    First, take out a small bowl, and add the dry ingredients to it - the almond flour, confectioners swerve, baking powder, and spices. 

    Then, give those ingredients a good whisk until they're well combined.

    Next, add all the liquid ingredients to the bowl - the egg, melted butter, vanilla, and apple extract - and mix with a spatula until a thick batter forms. 

    STEP 2: BAKING THE CAKE

    Now, coat an 8 oz ramekin with baking spray and pour the batter into it.

    Then microwave for 30 seconds, check on the cake, and microwave it for another 10-15 seconds and give it another check.

    At this point, a toothpick should come out clean from the center. But if it needs more time, you can continue cooking it in 5 seconds intervals until it's done. 

    Now, instead of using the microwave, you can cook this cake in the oven. If you want to do that, bake the cake in the oven at 350°F (175°C) until a toothpick comes out clean when inserted in the center - approximately 15 minutes. 

    STEP 3: MAKING THE CRUMBLE TO FINISH THE CAKE

    Once the cake is baked, you can make the crumble to finish it off. 

    First, take out a small bowl and add all of the crumble ingredients to it. Mix them until they're well combined, then microwave for about 15 seconds.

    Next, stir the crumble ingredients together and coat the top of the cake with baking spray. 

    Then, to finish this keto cake, add the crumble to the top of it, and dig in!

    STORING THIS KETO MUG CAKE

    I really love this recipe because portion control is built right into this keto mug cake. If it were a whole cake, I'd totally end up eating too many slices.

    So, - as I'm sure you can guess - after I make this cake, I usually eat the entire thing in minutes. But sometimes, I'll split it with my wife, or save half for the next day.

    If you don't finish off this single-serve keto dessert, you can cover the ramekin tightly in plastic wrap and store it for up to 2 days in the refrigerator. 

    Then to reheat it, just pop it in the microwave for a few seconds, or until it reaches your desired temperature, and enjoy!

    WRAPPING IT ALL UP

    This 5 minute keto cake is my go-to quick keto dessert right now. It is beyond easy to make, literally takes minutes, and just tastes incredible!

    The cake has a tender crumb that is irresistible on its own. And then the sugar free brown sugar crumble makes the flavor too good to be true. 

    Seriously, if you share this with anyone, I can almost guarantee they won't believe it is a gluten free and sugar free cake recipe. And if you only eat half, it will have just 2 NET CARBS!

    Ingredients

    Scale

    Apple Spice Cake:

    Heaping ⅓ Cup (42g) Almond Flour

    2 Tbsps (20g) Confectioners Swerve

    ½ Tsp (2g) Baking Powder

    Pinch of Cinnamon, Nutmeg, & Allspice

    1 Egg, whisked

    ½ Tbsp (7g) Melted Salted Butter

    ½ Tsp Vanilla Extract

    ¼ Tsp Apple Extract

    Sugar Free Crumble: 

    1 ½ Tbsps (14g) Almond Flour

    1 ½ Tbsps (14g) Brown Swerve

    ½ Tbsp (7g) Melted Salted Butter

    Pinch of Cinnamon, Nutmeg, Allspice

    Instructions

    1. First, make the cake. Add all of the dry ingredients for the cake to a small bowl and whisk until well combined.
    2. Add all the liquid ingredients to the bowl and mix with a spatula until a thick batter develops.
    3. Coat an 8 oz ramekin with baking spray and pour the batter into it.
    4. Microwave for 30 seconds, check on it, microwave it for another 10-15 seconds, and check again (It should be fully cooked at this point, but if it needs more time, continue cooking the cake in 5 second intervals). ***Alternatively, you can cook the cake in the oven at 350°F until a toothpick comes out clean from the center of it - about 15 minutes.
    5. Now make the crumble. Add all the crumble ingredients to a small bowl, mix until well combined, and then microwave for around 15 seconds.
    6. Stir the crumble ingredients together, coat the top of the cake with baking spray, and add the crumble to it. Dig in and enjoy!
