    THE BEST KETO CHICKEN MARSALA

My family is super Italian, and I love Italian food!

And not only is this chicken marsala one of my favorite keto chicken recipes, but it's also one of my favorite Italian dishes.

Everything cooks together in one pan - takes about 20 minutes to make - and it is just oh-so-yummy.

I mean, there's pan-fried chicken, savory mushrooms, and tasty seasonings, all in the most delicious marsala sauce, who wouldn't love that?!

Seriously, everyone who eats this will think you picked it up from an authentic Italian restaurant - yep, it's that good.

That said, don't be surprised if after you make this low carb chicken marsala it becomes one of your staple keto dinner recipes. I know it's quickly become one of mine.

    INGREDIENTS FOR KETO CHICKEN MARSALA

Ok, so another plus of this keto chicken marsala recipe is that it uses some simple ingredients that create a whole lot of flavor.

Now, the main difference between this recipe and "normal" chicken marsala is we won't be using any flour to coat the chicken.

But not to worry, the ingredients we will be seasoning the chicken with result in a perfectly crisped chicken breast with a delightfully golden browned crust WITHOUT all the carbs!

Anyways, here is the full ingredient list:

    • 4 small chicken breasts (or 2 large, cut in two)
    • ½ teaspoon black pepper
    • 1 teaspoon garlic powder
    • ½ teaspoon salt
    • 1 tablespoon olive oil
    • 2 tablespoon butter
    • 1 ½ cup cremini mushrooms, sliced
    • ½ small shallot, minced
    • 3 tablespoon Marsala cooking wine
    • 2 garlic cloves, minced
    • ½ cup chicken broth
    • ½ cup heavy cream
    • ½ tablespoon chopped parsley

As you can see, it's a pretty standard list of keto friendly ingredients.

And if you want another delicious keto chicken recipe that uses many of the same ingredients, try making this instant pot keto chicken stew, these air fryer chicken breasts, these keto chicken nuggets, or this blackened chicken recipe next!

    THE KETO MARSALA SAUCE

Now, you may be thinking, Joe, how can this be keto-friendly if it has wine in it?

Well, usually, any alcohol on the keto diet is a no-go. But in this case, the alcohol cooks away, and marsala cooking wine is actually super low in carbs.

Also, we'll only be using a small amount in this recipe - the total carb count is 1 carb for 3 tablespoons of marsala cooking wine.

So, everything in this delicious recipe is low carb and 100% keto-friendly!

HOW TO MAKE KETO CHICKEN MARSALA

As I mentioned earlier, this recipe is super easy to make, and everything cooks in one pan!

You just can't beat the simplicity of cooking this for dinner and the delectable results it yields.

Now, if you're ready to turn a classic Italian dish keto-friendly, let's get cooking!

    STEP 1: COOKING THE CHICKEN

The first thing you'll do is season your chicken breasts with salt, pepper, and garlic powder.

Then heat a large pan over medium heat and cover the surface with olive oil. Once the pan is heated, add your seasoned chicken and cook it for about 5-7 minutes on each side or until they are golden brown.

And make sure you do not move the chicken while it is cooking, besides flipping it. Leaving it in the pan to cook like this will give the chicken an amazingly flavorful crust that you just won't get if you move it.

Anyway, when the chicken is cooked, remove it from the pan, put it on a plate, and you can set it aside.

STEP 2: MAKING THE MARSALA SAUCE

Now, in the same pan you cooked the chicken in, add your sliced mushrooms, minced shallot, and butter. Cook everything for 1 minute and then add in the marsala wine and chicken broth.

Let these ingredients cook in the pan for about 5-6 minutes until the liquid has reduced in half. Next, add in the heavy cream, and turn your heat down to a simmer.

Then, let everything simmer for 2 more minutes, and add in a dash of salt

STEP 3: COMPLETING YOUR DISH AND SERVING

So, after the creamy marsala sauce has simmered, you can take your cooked chicken breasts from earlier and add them back into the pan. Then, you'll want to use a spoon to cover the chicken breasts with the marsala sauce, and serve!

Feel free to add some more of the marsala sauce to each piece of chicken once plated, and garnish with fresh parsley.

STORING & REHEATING YOUR CHICKEN MARSALA

This recipe makes 4 servings, and it is so perfect for a date night or family dinner. And odds are, you won't have any leftovers!

But if you do, you can store your leftovers in an airtight container for up to 3 days in the refrigerator.

Then to reheat your chicken marsala, you can warm it in the oven at 350°F (177°C) for about 15-20 minutes.

Or, you can reheat in a pan covered with a lid over medium-low heat until it reaches your desired temperature - just add a little bit of broth to the pan before reheating.

    NUTRITIONAL INFORMATION

Keto dinner recipes don't get any more low carb than this meal. Like I mentioned earlier, each serving has 0.75 NET CARBS!

Plus, this recipe has a good amount of fat, too - talk about a perfect keto meal!

For the rest of the macros, each serving has:

Made this last night, left out the booze, tossed in some broccoli after giving the mushrooms a few minutes of a head start. The tip with not touching the chicken for 5-7 minutes was great, the crust was amazing, yet the interior still moist and tender.
      Great one, thanks Joe
