How To Make Keto Broccoli Casserole
This keto broccoli casserole recipe is surprisingly easy to prepare, and shouldn't take you more than 15-20 minutes, followed by just 15 minutes in the oven.
It's a super simple recipe to make that you can throw together in about 30 minutes as long as you have the ingredients.
Also, for this broccoli casserole recipe, you won't need any specialized kitchen utensils or appliances. All you need is a medium-sized pot (to steam or boil the broccoli), a medium-sized pan, a casserole dish, and a warm oven. Nothing too fancy!
So with all that said, let's dive into how to make broccoli cheese casserole!
Step 1: Preparing the Broccoli
What may not come as a surprise to you is that broccoli is the most prominent ingredient in this broccoli casserole.
Shocking, we know.
So you'll want to start this recipe off by preparing the broccoli. Separate the heads of broccoli into florets — each "tree" of broccoli is one floret.
And there are two main ways to prepare the broccoli from here, and both work great: steaming or boiling.
Honestly, it's just personal preference on what you would rather do.
If you choose to steam them, you'll need to let them steam for about 5-6 minutes to ensure proper moisture retention and firmness.
If you decide to boil them, just let the florets boil for 2-3 minutes.
Whichever method you choose, the important thing here is not to overcook the broccoli as it will be cooked more during the baking stage later.
Step 2: Making the Cheese Sauce
While the water is boiling, or while the florets are steaming, you can prepare the sauce.
Using a small pot, combine the full-fat cream cheese, heavy cream, a cup of grated cheddar cheese, onion powder, salt, and black pepper.
By the way, if you'd like to make your cheese sauce without cream cheese, I've got a recipe for cheese sauce without it. So, you can always make that cheese sauce for this casserole too.
Anyway, you'll want to gently stir the mixture together to ensure there is even mixing throughout.
Then, once the mixture is stirred together, turn the burner on "low heat" and slowly cook the sauce mixture.
Gently stir the mixture occasionally and let it cook until the cheese has melted — no need to keep it going until it boils or anything like that.
Step 3: Baking the Casserole
At this point, the broccoli should be finished steaming or boiling, and the sauce should be warm with the cheese melted.
You've done the hard parts, and you're almost done!
Place the broccoli into a pot (or use the one you boiled it in after you drain the water) and pour the sauce mixture over the broccoli. Stir this mixture together until the sauce is evenly mixed throughout the broccoli florets, and everything is combined.
Add this mixture to a 12-inch casserole dish and spread it out to make sure it will cook evenly while it bakes.
Once it's spread evenly, add the remaining half-a-cup of grated cheddar cheese to the top, and cover as much of the casserole with it as you can.
Also, if you want to add the optional almond flakes, now would be the time to do so.
Lastly, bake the broccoli and cheese casserole in the oven at 350℉ (177°C) for 15 minutes.
Then, carefully remove the casserole once it's finished and let it cool before serving.
That's it!
It is that simple to make a delicious low carb broccoli casserole recipe that is sure to be a hit!
