    The BEST Keto Green Bean Casserole Recipe

    Green bean casseroles are a staple in many families at just about any family gathering - especially at Thanksgiving.

    But, as I'm sure you're aware, most green bean casserole recipes aren't inherently keto friendly.

    So, that's why we're getting a little creative today and making the best keto green bean casserole recipe on planet earth and beyond!

    Seriously, this is such a good green bean casserole with a thick creamy sauce that your family won't even realize it's low carb. Not to mention, it's easy to make too!

    There is little prep time and baking time so that you can spend less time in the kitchen and more time enjoying this tasty meal. And the few ingredients you have to use are easy to get and are just as delicious in a keto dish as a non-keto dish. 

    That said, by following the recipe below, you'll be able to make a keto green bean casserole with gooey cheese and crispy onions that's completely keto-friendly.

    Ingredients You'll Need 

    First, let's talk about the ingredients we'll need to make the best green bean casserole! You'll notice that all of them are used in traditional green bean casserole, but with a few substitutes that makes this a keto green bean recipe. 

    For this keto green bean casserole we'll be using:

    • 2 ⅔ Cups Fresh OR Frozen Green Beans
    • 2 Cups Button Mushrooms
    • ⅓ Cup Chicken Broth
    • 8oz. Cream Cheese
    • ½ Cup Cheddar Cheese
    • 1 Clove Fresh Garlic
    • 1 tablespoon Butter
    • ⅓ teaspoon Dried Thyme
    • Salt & Pepper
    • Pork rinds (for topping)

    So, I'm guessing most - if not all - of you have those ingredients at home already since they're pretty standard keto ingredients. 

    And the other nice thing is that those low carb ingredients aren't too far off from "normal" green bean casserole ingredients.

    It's a win-win.

    Now, I don't know about you, but I like to add crispy onions to the top of my green bean casserole. But, crispy onions aren't typically keto.

    So, to make some keto friendly crispy onions you'll need:

    • ½ Cup Small Onion
    • 2 tablespoon Blanched Almond Flour
    • & ½ Cup Avocado Oil, For Frying

    Are Green Beans Keto?

    Alright, a question that I see a surprisingly a lot is, "Are green beans keto?" And the answer is yes, green beans are very low in carbs, and they're mostly fiber.

    Not to mention, every cup of green beans has just over 3 net carbs and can easily fit into a low carb keto lifestyle. The carb count on green beans is also one of the main reasons why a green bean casserole is a delicious side-dish option for those following a keto diet. 

    Additionally, both frozen and fresh green beans are keto, so you have options.

    Now that we've gone over the ingredients, let's get into the step-by-step instructions on how to make a keto green bean casserole!

    How to Make Keto Green Bean Casserole

    Ok, so the best part about this green bean casserole is that it's super quick to put together, and it doesn't require a ton of ingredients!

    Also, clean-up's a breeze since it doesn't take multiple pans or baking dishes to make!

    And, as a lot of you know, I'm all about making clean-up as easy as possible when it comes to making recipes. That's why this low carb cheeseburger casserole recipe and this keto friendly taco casserole recipe are a couple of my favorite keto recipes.

    Most of all though, I just love how easy casseroles are to make. And this green bean casserole certainly no exception to that rule!

    So, let's get into the nitty-gritty on how to make a keto green bean casserole in a blink of an eye. Well, maybe not that quick, but close!

    Step 1: Prep Work For This Keto Casserole 

    Begin by preheating your oven to 350℉ (177℃). 

    Preheating your oven is an essential part of the baking process. It helps you not overcook your casserole since the ingredients you use will be fully cooked by the time you begin baking anyway.

    Next, you'll get your green beans ready. If you're using fresh green beans, you'll need to boil them in salted water for about 10 min or until they're tender. And if you're using frozen green beans, then you'll need to defrost them.

    To defrost them, you can put them in a microwave-safe bowl and add a small amount of water. Then cover with a paper towel and heat for about 1-2 minutes.

    However, whether you chose fresh green beans or frozen green beans, you'll still need to drain them and put them aside in a bowl for later.

    The last thing you'll want to prep is the shredded cheese. And I recommend shredding the cheddar cheese yourself since it will save you some carbs. Pre-shredded cheeses usually have starches added to them - which contain carbs - to prevent sticking and also for added freshness.

    So, keep that in mind when you're making your casserole.

    Anyway, when you're done shredding the cheese, you can add it to a small bowl and set it aside for later.

    Step 2: Sautéing The Ingredients & More

    Next, you'll want to melt the butter in a large non-stick pan over medium heat.

    Then, when the butter is melted, toss in the sliced button mushrooms, and add the garlic. 

    Sauté everything for a few minutes, making sure to season it with the thyme. And you can also add salt and pepper to taste at this point as well.

    After a few minutes of cooking, slowly stir in the chicken broth and deglaze the pan. Then, add the cream cheese, and occasionally stir until it completely melts in the broth. 

    Next, turn off the heat and add the green beans you set aside previously. And be sure to stir the beans gently into the cream cheese mixture to get them evenly coated with it.

    Step 3: Baking The Casserole

    Ok, so, your oven should be warmed up by now, and you're ready to start baking! 

    And, since all of the ingredients are already cooked, the baking process will only take 10 minutes. 

    That said, baking the ingredients - even for just 10 minutes - will blend all the flavors nicely and melt the cheese. It's really where all of the magic happens with this keto friendly green bean casserole. 

    Ok, so, to bake the casserole, you'll want to transfer everything from the pan into a small casserole dish. 

    Next, top the mixture with the cheddar cheese you shredded earlier. Bake for about 10 minutes, or until hot throughout.

    You'll know it's ready when the cheese turns a nice, golden color.

    Step 4: Making The Crispy Onions

    While your casserole is baking, you'll want to get your keto crispy onions ready.

    Start by coating the sliced onions with non-stick baking spray and then add them to a bowl. Then, you'll toss them in almond flour until all of them are evenly coated with it.

    Now, in a medium non-stick pan, heat the avocado oil until it begins to steam. After this starts to happen, add in the onions and fry until they turn golden brown. 

    Now, set them aside, and let them cool on a paper towel-lined plate until your casserole is done baking.

    Step 5: Serving the casserole

    When the casserole is ready, carefully take it out of the oven, and let it cool for just a minute or two. 

    Next, top it with the crispy onions and spread them evenly on the surface of the casserole. 

    Finally, add in some crushed pork rinds as a garnish, and your classic green bean casserole keto made is ready to serve!

    How to Store Leftover green bean casserole

    Ok, so you've made this keto green bean casserole, you loved it, and now you have leftovers that need to be stored.

    In the refrigerator, your leftovers will last up to 5 days if you store them in an airtight container. However, if you don't think you will eat all of the green bean casserole in 5 days, you can always freeze it for up to 6 months.

    No matter which option you choose, you can't go wrong. This keto casserole heats up incredibly well, and it might even be better the next day/s you make it.

    Green Bean Filling:

    2 ⅔ Cups (400g) Fresh OR Frozen Green Beans

    2 Cups (250g) Button Mushrooms

    ⅓ Cup (80mL) Chicken Broth

    8oz (224g) Full Fat Cream Cheese

    ½ Cup (56g) Cheddar Cheese

    1 Clove (3-4g) Fresh Garlic

    1 Tbsp (14g) Butter

    ⅓ Tsp Dried Thyme

    Salt & Pepper

    Pork rinds (for topping)

    Crispy Onions:

    ½ (40g) A Small Onion

    2 Tbsp (14g) Blanched Almond Flour

    ½ Cup (120g) Avocado Oil, For Frying

    Instructions

    1. Preheat your oven to 350℉ (177℃).
    2. If using fresh green beans, boil them in salted water for about 10 min or until tender. If using frozen green beans, defrost them. Drain the green beans and set aside. Shred the cheddar and set aside.
    3. In a large non-stick pan over medium heat, melt the butter. Sauté the mushrooms and garlic for a few minutes. Season with salt, pepper, and thyme.
    4. Stir in the chicken broth and deglaze the pan. Then add the cream cheese, stirring occasionally until it melts.
    5. Turn off the heat. Add the green beans to the pan and stir gently. Transfer everything to a small casserole dish. Top with the cheddar and bake for about 10 minutes or until hot throughout.

    CRISPY ONIONS:

    1. Coat the sliced onions with non-stick baking spray, add them to a small bowl, and coat them in the almond flour.
    2. Then, in a medium non-stick pan, heat the oil. Add in the onions and fry until golden brown.
    3. Let them cool on a paper towel-lined plate.
    4. When the casserole is ready, top it with the onions and crushed pork rinds.
