    THE BEST ALMOND FLOUR PIE CRUST

    Whether you follow the keto diet, are looking for a gluten free alternative, or just want a healthy pie crust, this recipe has you covered.

    This almond flour crust is completely gluten free, sugar free, and keto friendly! And since there is no gluten, you don't have to worry about overworking the dough and making it tight and rigid. 

    Plus, there is no kneading necessary, making this grain free pie crust even easier to make! All you have to do is mix a few ingredients, par-bake the crust, and it's good to go. 

    And this keto pie crust turns out so flaky, so buttery, and so perfectly sweet, you might actually fool someone into thinking it was a traditional pie crust!

    Oh, and if you're looking for an idea of what pie to make, I highly suggest using this low carb pie crust to make my Keto Pecan Pie. It has just 2 NET CARBS per slice, and is a total crowd pleaser - no one ever knows it's sugar free!

    Ingredients 

    All the ingredients this almond flour pie crust calls for are pantry staples, especially if you regularly make keto desserts.

     Here are all the ingredients you'll need to make this almond flour crust:

    • 1 ¾ cups almond flour 
    • Just over 5 ¼ tablespoon cold butter, cubed
    • 1 ½ tbsps granulated erythritol 
    • 1 tablespoon apple cider vinegar 
    • 3-4 tablespoon cold water 
    • Pinch of salt

    And what's great about these ingredients is you can use the majority of them to make my 5-Minute Keto Pumpkin Pie! So if you're craving pie but don't want to make an entire thing, this is an excellent option.

    Substitutes For Almond Flour

    So, even though this is an almond flour pie crust recipe, you can substitute the almond flour out and keep this a gluten free and keto pie crust. 

    The best flour you can use to replace the almond flour is an equal amount of walnut flour, pecan flour, or sunflower seed flour. All three have similar properties and will work just as well to make this a gluten free pie crust. 

    With that said, do not use coconut flour as a replacement to make the crust. It is too absorbent, will ruin the texture, and the crust just won't turn out.

    MAKING THIS A SUGAR FREE PIE CRUST

    One of the most underrated components of a pie crust is an added subtle sweetness. It takes the flavor of whatever filling you decide to use to another level.

    And to make this a sugar free pie crust, I used Granular Swerve. It has no sugar and 0 calories, so it won't add any unnecessary calories but will add a wonderful flavor. 

    Another sweetener that you can use is Lakanto's Monk Fruit Sweetener. This monk fruit sweetener also has no sugar and no calories making it perfect for the keto diet and this curst!

    How to Make Almond Flour Pie Crust

    This recipe might be the easiest pie crust that you ever make from scratch.

    Even if you've never made a crust before, you'll find the process super simple, and it will turn out perfect.

    So, gather the ingredients you need, and lets into baking this almond pie crust!

    Step 1: Preparing The Pie Dough

    First, put the almond flour, granulated erythritol, salt, and cubed butter in a mixing bowl. Then, lightly combine these ingredients with your hands until they turn into a sandy structure.

    Next, pour the apple cider vinegar and water into the bowl and continue mixing with your hands until you have a compact pie dough.

    Step 2: Shaping The Crust

    Now that you have a dough ball coat the bottom and sides of a pie dish with butter and transfer the dough into it. 

    Then using your hands, evenly spread the dough in the dish, forming it along the edges and shaping it into a crust. 

    Once you have a fully formed pie crust, poke the bottom of the crust with a fork to prevent the formation of large air bubbles. And when the crust is good to go, lightly cover it with plastic wrap and put it in the refrigerator for about 20 minutes or longer. 

    During this time, you can prepare the filling of your choice, like the pumpkin pie filling from this recipe or the pecan pie filling I mentioned earlier.

    Step 3: Par-Baking The Crust

    While the crust is chilling, preheat the oven to 320 degrees Fahrenheit (160°C).

    Then, when 20 minutes is up, and the oven is preheated, bake the crust for 10 minutes.

    To finish up, add the filling your choice and bake depending on the filling time. Enjoy!

    Freezing Almond Flour Pie Crust 

    The best part about this almond pie crust is you can prepare it and freeze it to use another time!

    If you want to freeze the crust before par-baking it, shape crust in the pie pan, wrap it tightly with cling wrap and store it in the freezer until you are in the mood for some pie. 

    To freeze the baked crust, let it cool down fully after you par-bake it. Then carefully remove the crust from the pan, wrap it in parchment paper, and transfer it to a freezer-safe bag. Whenever you want to make a pie, just take it out of the freezer and let it thaw for about 15 minutes at room temperature when you make the filling. 

    Either way is a total time-saver, and you can freeze the crust for up to 6 months!

    Ingredients

    1 ¾ cups (170g) almond flour

    Just over 5 ¼ tbsp (75g) cold butter, cubed

    1 ½ tbsps granulated erythritol

    1 tbsp apple cider vinegar

    3-4 tablespoon cold water

    Pinch of salt

    Instructions

    1. Place almond flour, granulated erythritol, salt, and cold butter in a mixing bowl, lightly combine with your hands until the structure is sandy.
    2. Add apple cider vinegar and cold water and mix until it becomes a compact dough.
    3. Coat a pie pan with butter and evenly spread the dough on it and along the edges. Poke some of the bottom of the crust with a fork. 
    4. Place in the refrigerator for about 20 minutes or longer.
    5. Bake in the oven at 320°F (160°C) for 10 minutes to par-bake the crust.
    6. Add filling of choice and bake depending on the filling time.
