- 2Lbs (907g) 80/20 Lean Ground Beef
- 2 Cloves of Garlic Minced
- 1 Medium Onion Chopped (225g)
- 2 ½ Cups Shredded Cheddar Cheese (280g)
- ¼ Cup (56g) Avocado Mayonnaise
- ¼ Cup (56g) Sugar Free Ketchup
- Crushed black pepper to taste

Making this keto cheeseburger casserole is super easy. I mean, everything comes together in one skillet in just a couple of steps.
How can you beat that?!
Prep work
So, here are the prep steps...
- De-skin and mince 2 cloves of garlic.
- Cut off the ends of a medium-sized onion, cut it in half, remove the skin, and then chop it up.
- Measure out 2 ½ cups (280g) shredded cheddar cheese.
- Add ¼ cup (56g) of both mayonnaise and low sugar ketchup to a small dish, and mix until combined.
How simple and easy is that?!
Cooking Instructions
Set a burner on your stove to medium heat, and add 1 -2 tablespoons of oil to a large skillet. When the oil gets warm, add the minced garlic.
Once the garlic becomes fragrant, add the onions, and cook them until they become translucent.
When they do, it's time to add the ground beef. And for today's keto cheeseburger casserole recipe, you'll need 2lbs of it.
So, once you've added the beef, you'll want to break it down and work it into the onions and garlic.
Stir the skillet occasionally, and when the beef is cooked through, drain any excess juice using a wire strainer.
Now, return the ground beef mixture to the skillet, and turn the heat of the burner to low.
Add the sauce we made earlier, along with some crushed black pepper, and about ⅓ of the cheddar cheese.
At this point, you'll want to use a spatula to constantly mix/work the sauce and cheese into the ground beef. Then once the shredded cheese melts, you'll want to top the cooked ground beef mixture with the remaining cheese.
Now, set your oven to broil, and add the skillet to the oven.
Cook until the cheese melts.

How To Meal Prep Keto Cheeseburger Casserole
It's super easy to meal prep this low carb hamburger casserole recipe.
What I recommend doing is using a food scale to portion out 6 equal-sized servings of the casserole.
To do this, add a large bowl to your food scale, tare it out to 0 grams, and add all of the cheeseburger casserole to the bowl.
Now, divide whatever number appears on the scale by 6.
Whatever number you get is the amount - in grams - that you'll want to add to each one of your meal prep containers.
So, a big pro-tip is to leave your cheeseburger casserole on the scale and tare it out to 0 again.
Now, remove a little bit of the casserole at a time from the scale until it gives you a negative reading of the grams you figured out from before.
Remember, you're removing the casserole, so the number should be negative, not positive.
Zero out the scale again, and repeat this process until you've split up the casserole equally between 6 meal prep containers.
By the way, even though this recipe makes 6 servings, so you can store the leftovers in an airtight container and they'll last in the fridge for 4 days.

Ingredients

Cook and stir until the cheese melts.
Once it does, top the casserole with the rest of the cheese.
Now, set your oven to broil, and broil the skillet until the cheese melts.
Once it does, top with some fresh chives, and enjoy!
Notes
To keep the carbs as low as possible, shred your own cheddar cheese. The prepackaged kind will come with "starches" which will increase the carb count on the cheese.

AWESOME!! This is the area that I struggle with the most on the Keto lifestyle, trying to come up with dinner ideas. I can’t wait for more of them from you because as I’ve said before I love all your recipes! Couple of questions or suggestions for this yummy cheeseburger casserole, I’m wondering if I could use minced dehydrated onions and garlic after I reconstitute them in some warm water? Also I’m sure they would add a similar flavour profile and am wondering if it may reduce the carbs? Also one other problem that I have with a lot of recipes is they don’t seem to have enough “bulk” to them and usually feel like I’m missing the rice or pasta, so I tried something the other day that worked and the crazy part was it all but disappeared in the casserole but added a ton of bulk and made you feel like you were getting a complete meal and I’m thinking I could try it with this recipe. I found in the produce section something called cauliflower crumble which is slightly larger then cauliflower rice more like little nuggets and I blanched they entire bag in boiling water until they were fork tender and then I drained them really well and at the point where you drained your ground beef(which I never need to do I think it’s because I buy grass fed grass finished ground beef has almost no fat in it)I added the cooked crumble and mixed it in well and it seems to brown up a bit and absorbs all the yummy flavours and then I add the mayo/ketchup sauce(which I also added a couple of tablespoons of pickle juice from my garlic pickles) and we also like mustard on our burgers and since I had some on hand I added it to the sauce as well. I served this with a half a pickle on the side and a baby spinach salad on the side that I just drizzled some pickle juice over for a simple dressing. Anyway I have found we hadn’t been eating enough leafy green veggies on keto so I’m trying to incorporate more of them as a side dish.

This was a super easy and delicious meal. Kid friendly too! My only comment would be that I felt like it was half of a meal -- I cooked up cauliflower rice and put that under it when serving, and then topped it off with sour cream, tomato, avocado and hot sauce. It was great.
