    THE BEST CHOCOLATE KETO PIE

    I've been making a ton of mini 5-minute keto pies lately, and I love chocolate, so I had to create a chocolate pie that is low carb, sugar free, and gluten free. And honestly, this might be my best keto pie creation yet. And I don't say that lightly. 

    The keto chocolate mousse pie filling is silky smooth with a rich, sweet flavor. But the deliciousness doesn't stop there - the filling is on a toasted almond flour pie crust that is so good, I could just eat it alone.

    Leveling up this low carb pie - even more - is the fact that it has only 3 NET CARBS per serving! And if you end up eating the entire thing in one sitting - which it's almost impossible not to - the whole pie has just 6 net carbs.

    Plus, this keto pie recipe is incredibly easy to make! As I mentioned before, it takes less than 5 minutes from start to finish! And no, you're not dreaming - this is real. It might be one of the easiest keto pie recipes ever created.

    INGREDIENTS

    Another plus this keto chocolate pie has is you only need 7 simple ingredients to make it! And if you've made another one of my quick keto desserts recently, then I can almost guarantee you have everything you need.

    Here are the ingredients for the pie crust:

    • 2 Tbsps Salted Butter, melted
    • ½ Cup Blanched Almond Flour (I toasted mine)
    • 3 Tbsps Confectioners Swerve
    • Pinch of Salt 

    And for the chocolate filling:

    • Just less than ⅓ Cup Mascarpone cheese
    • 1 ½ Tbsps Unsweetened Cocoa powder
    • 2 Heaping Tbsps Confectioners Swerve
    • 1 tablespoon Vanilla Unsweetened Almond Milk
    • Pinch of Salt

    Now, if you don't want to use mascarpone cheese, you can use cream cheese in its place. But the pie will taste a little cheesier - mascarpone has a more neutral flavor.

    Oh, and by the way, if you have the filling ingredients, then you have almost everything you need to make my keto frosty and this low calorie hot chocolate. So, if you love chocolate, give that recipe a shot next!

    FLOURS TO USE FOR THE KETO PIE CRUST

    So, to make this pie low carb and gluten free, I made an almond flour pie crust. I like to use almond flour because it gives the crust the perfect tender texture.

    But if you want, you can substitute the almond flour for an equal amount of walnut flour, sunflower seed, or pecan flour, and you'll get the same incredible result. 

    However, with that in mind, DO NOT use coconut flour in place of almond flour. It is an absorbent flour - much more absorbent than almond flour - and it will cause the crust to dry out and crumble underneath the filling.

    MAKING THIS A SUGAR FREE PIE

    Now, as you may have guessed, this is not only a low carb pie recipe, but a completely sugar free pie recipe as well.

    And to make it sugar free, but keep that sweet flavor that makes this keto chocolate cream pie so good, I used Confectioner Swerve for the crust and filling. Swerve has 0 calories, no sugar, and no effect on blood sugar - so it's the perfect sweetener for the keto diet.

    Another keto sweetener that you can use though is Lakanto's Powdered Monk Fruit Sweetener. This monk fruit based sweetener also has 0 calories, no sugar, and is as sweet as sugar - just like Swerve.

    HOW TO MAKE KETO CHOCOLATE PIE IN 5 MINUTES

    Ok, now that you know what ingredients to use to make this keto chocolate fudge pie, let's get down to the good stuff.

    In just a few minutes, you'll be able to dig into this tasty pie, so let's not waste any more time, and jump right into this keto chocolate pie recipe!

    STEP 1: MAKING THE CRUST

    So the first step in making this keto chocolate cream pie is to make the crust. To do that, add all the crust ingredients to a medium-sized bowl, and mix them with a rubber spatula until a crumbly consistency forms.

    Then, when it does, use your hands to combine the ingredients and form a ball of dough.

    Once you have a dough ball, coat a 4-inch bowl with baking spray, and put the dough in the bowl. Then use your fingers to press the dough out into the shape of a pie crust. And don't worry if it is a little crumbly when you do this - it is normal.

    Now, you can either eat it as a no bake pie crust - since it's safe to eat raw - or microwave the crust in 3, 30-second intervals. Then pop it in the freezer while you make the filling.

    By the way, you can also bake the pie crust if you'd like. Just 5-10 minutes at 350° Fahrenheit should be enough time for it to cook through.

    STEP 2: MAKING THE FILLING

    Now, to make the filling for this keto chocolate pie, add the mascarpone cheese in a small bowl, followed by the rest of the filling ingredients. 

    Then, mix them with a rubber spatula until they're well combined, and you have a thick, chocolate pudding-like filling.

    Next, take the crust out of the freezer, pour the filling on top, and evenly spread it out. 

    Lastly, dig right into this low carb chocolate pie, or put it in the freezer for 10-15 minutes to further develop the flavors. 

    STORING THIS CHOCOLATE KETO PIE

    So, this chocolate keto pie recipe will make 2 servings - each being one-half of the pie.

    And, as I mentioned earlier, it is almost impossible not to finish off the entire thing after you make it, so you might not have any leftovers.

    But if you do, you can cover the bowl tightly with plastic wrap and keep the pie in the fridge for up to 4 days.

    Then, whenever you want to enjoy it, just take it right out of the fridge, and dig in! Personally, I think this keto pie tastes even better leftover and chilled.

    Ingredients

    Pie Crust:

    2 Tbsps (28g) Salted Butter, melted

    ½ Cup (56g) Blanched Almond Flour

    3 Tbsps (24g) Confectioners Swerve

    Pinch of Salt

    Chocolate Filling:

    Just less than ⅓ Cup (84g) Mascarpone cheese

    1 ½ Tbsps Unsweetened cocoa powder

    2 Heaping Tbsps (21g) Confectioners Swerve

    1 Tbsp (15g) Unsweetened Almond Milk

    Pinch of Salt

    Instructions

    1. Add all of the crust ingredients to a medium sized bowl, and mix until crumbly.
    2. Once crumbly use your hands to form a ball of dough.
    3. Then coat a 4-inch bowl with baking spray and add the dough to the bowl. Use your fingers to press the dough out into the shape of a pie crust - it’s ok if it’s a little crumbly as you do this.
    4. Eat as a no bake crust or microwave the crust in 3, 30-second intervals. Freeze the crust while you make the filling.
    5. In a small bowl, add all of the filling ingredients. Mix them until they’re well combined, and then pour the filling into the crust and spread it out evenly.
    6. Eat the pie straight out of the bowl, or freeze it for 10-15 minutes to let the flavors develop even further. Enjoy!

      I made it today and it turned out GREAT! It has this wonderful taste, but not too sweet at all. I tripled the recipe to make a whole 9” pie to share with my company. They really liked it and requested the recipe. THANK YOU SO MUCH!!
