    These keto gingerbread donuts are the ultimate winter treat. They're cakey, have hints of cinnamon and ginger, and are glazed to perfection! And best of all, these keto donuts have just over 2 NET CARBS! So, if you're looking for a quick keto breakfast, or a delicious keto dessert this holiday season, these donuts might just be the answer.

    The Best Keto Gingerbread Donuts 

    Winter is here, and so are the holidays.

    And, I don't know about you, but something about eating gingerbread donuts in the winter feels so right. 

    I mean, think about it; it's cold outside (at least in Buffalo it is), you have on a cozy sweater, a cup of hot coffee, and you're eating a soft, fluffy donut to go with it.

    What more could you want?

    Come on, mornings don't get much better than that!

    By the way, if you need a new morning drink - something other than coffee - to go along with these donuts, try this keto pumpkin spice latte!

    Now, as I already said, these gingerbread donuts are not only perfect for an easy keto breakfast, but they also double as a keto dessert. 

    But, I'm sure you're wondering, "how easy is easy, Joe". Well, from start-to-finish, they take just 30 minutes to make.

    And, that's not even the best thing about this keto gingerbread donut recipe.

    The best thing is that each one of these keto gingerbread donuts has just over 2g NET CARBS! And, with how good these taste, you'd never even think they were low carb donuts unless somebody told you.

    Honestly, give one of these donuts to your family or friends, and they won't believe they didn't come from a bakery.  

    Anyway, now that I've hyped these festive keto donuts up beyond belief, let's talk about the ingredients you'll need to make them!

    Ingredients For Gingerbread Keto Donuts

    Ok, so, to make this keto gingerbread donut recipe, we're going to need quite a few ingredients.

    But don't worry, you should have the majority - if not all - of these keto friendly ingredients on hand.

    If for some reason you don't though, take a quick trip to the grocery store, or order them online as soon as you can, because, trust me, you're not going to want to miss out on making these donuts.

    Ok, so for the dry ingredients you'll need:

    • Just less than 1 ½ cups blanched almond flour
    • 1 tablespoon finely ground golden flaxseed meal
    • 1 heaping tablespoon unsweetened cocoa powder
    • 1 teaspoon baking powder
    • 1 ½ teaspoons cinnamon
    • ½ teaspoon ginger powder
    • ½ cup Brown Swerve
    • Pinch of salt

    Then, for the wet ingredients you'll need:

    • 2 eggs
    • ⅓ cup unsweetened almond milk
    • ½ cup butter, melted  

    And, finally, for the glaze you'll need: 

    • ¼ cup heavy cream
    • 1 teaspoon pure vanilla extract
    • 1 cup Confectioners swerve

    So, as you can see, some pretty standard keto ingredients is all you'll need.

    The only thing you might not have is the ground flaxseed meal, but definitely pick it up. You can put it to good use by making this 5-minute keto oatmeal! 

    Oh, and if you're on the fence about making the glaze, definitely make it! It's so good, and the sweetness of the glaze balances out the gingerbread spice and ties all the flavors together.

    Keto Friendly Flours to use For These Donuts

    Ok, so, we'll be making these donuts with almond flour,  but you have a few other keto friendly flour options to make your donuts with too.

    You can either use walnut flour or sunflower seed flour in place of almond. They work perfectly as a substitute for one another on a one for one basis, and you'll still end up with donuts that have a soft, cakey consistency. 

    Also, if you've read my blog before, you've probably heard me say this, but it is worth mentioning again. Coconut flour SHOULD NOT be used as a substitute for almond flour!

    Coconut flour is HIGHLY ABSORBENT, and if you use it, your donuts will turn out dry, with a crumbly consistency.

    Keto Friendly Sugar Substitutes 

    Ok, now let's talk about some substitutes for the sweeteners. 

    I used a combination of Brown Swerve and Confectioners Swerve to make these keto gingerbread donuts, but there are some other options you can use too.

    Instead of Swerve, you could also use Lakanto's Golden and confectioners sweeteners.

    AVOID USING STEVIA

    You will want to avoid using Stevia - which in its purest form -is 300 times sweeter than sugar. 

    Since Stevia is so sweet, stevia products are usually mixed with sugar- typically maltodextrin and dextrose. And the truth is that a lot of stevia products are made up of mostly those sugars, and a teeny-tiny bit of stevia. 

    So try to avoid most Stevia products; they will either be way too sweet for your recipe or kick you out of ketosis. And neither of those options sound good to me.

    So, just keep that in mind when you're making this keto donut recipe.

    Now let's get baking!

    How To Make Keto Gingerbread Donuts

    Ok, so I told you these keto gingerbread donuts were easy to make.

    And I told you from start-to-finish all you'll need is 30 minutes to make them.

    But, I did leave one thing out. And that's the fact that you'll just need to follow 5 simple steps to make these donuts.

    Yep, that's it.

    So, even if you're the most inexperienced of bakers, you can feel confident about making this recipe.

    It's basically fail-proof!

    Step 1: Prep For The Donuts

    First and foremost, for this recipe, you will need to use a donut tray.

    And, I know this isn't technically "prep work", but it is a super important component to this recipe - and I'm going to mention it first since it's THAT IMPORTANT.

    That said, I HIGHLY recommend getting/using a silicone tray to make these keto gingerbread donuts with.

    The donuts will easily slide out of the silicone tray, and they're so simple and easy to clean.

    And, just so you know, this is coming from someone who used to own a non-stick donut tray. Let me tell you, it sucked! The donuts stuck to the tray half of the time - yeah, pretty much the opposite of "non-stick".

    So, if this sounds like something you've been experiencing too, invest in a silicone tray. They're cheap - like $8 on Amazon cheap - and worth every cent.

    Anyway, rant over.

    As far as prep work goes for this donut recipe all you'll need to do is pre-heat your oven to 350 degrees.

    STEP 2: Mixing The Ingredients

    Now, while the oven is pre-heating, add your dry ingredients together in a large mixing bowl.

    After they are all added to the bowl, mix the ingredients until well combined.

    Then, in a separate mixing bowl, combine the eggs and whisk them until the yolks and whites are combined.

    Next, you can add in the melted butter and whisk it together with the eggs - DO NOT pour in the almond milk yet!

    Now, once the dry and wet ingredients are independently mixed, you're ready to move on to the next step.

    Step 3: Mixing and Baking the Donuts

    With your wet and dry ingredients in separate bowls, measure the almond milk and have it ready to go - we'll be adding it intermittently as we combine everything together.

    So, you'll want to ALTERNATE between adding the dry ingredients and almond milk to the wet ingredients. I like to do this in 2 batches. So I'll add have of the dry ingredients, and mix. And then I'll add half of the almond milk, and mix.

    Then, I'll just repeat that until a thick batter forms in my bowl.

    Step 4: Baking the Donuts

    Ok, so now we're ready to pour the batter into a donut pan and bake our keto donuts! 

    The first thing you'll want to do is generously coat the donut tray with baking spray.

    Then, use a spoon to fill each of the slots about ¾ of the way full. 

    The batter should be evenly distributed around the circle. For consistency between each donut, try to pour the batter in each of the donut slots equally. 

    Once your donut tray is filled, bake the donuts for about 30 minutes.

    And if this is your first time making them, check them at 20 minutes to see how they're coming along. You don't want them overdone.

    Now, when they are ready to be taken out of the oven, the edges will be solid and pulling away from the circles on the donut tray. 

    Finally, allow the donuts to completely cool in the pan before removing them.

    However, while they are cooling, you can get started on the topping!

    Step 5: Making the Glaze

    To start, put all of your ingredients for the glaze into a bowl. 

    Mix the ingredients together until a smooth glaze forms. 

    After the donuts have cooled, individually dip them into the glaze and cover the top of the donut. 

    Put the donuts on a cooling rack to let the glaze set and harden.

    Then, once it sets, you've got yourself a delicious festive keto breakfast, or even dessert!

    Storing your Donuts

    Ok, so you just baked the donuts, you ate one and loved it! And they're so tasty you want to make sure you save a few. 

    To store them, you'll want to put them in an airtight plastic container or sealable bag. Since the glaze has hardened, you can easily stack the donuts and the glaze should keep its form.

    Now, you're probably wondering if you have to keep them in the refrigerator? And the answer is no, not at all.

    I personally like to keep mine out on the kitchen counter. But, either way, these donuts will stay good for up to a week.

    That said, if you want to save some of these donuts for longer, they'll stay good in the freezer for up to 3 months in an airtight container or freezer-safe bag. 

    When you want to eat one of these delicious keto gingerbread donuts, just let it thaw or pop it in the microwave for a warm treat!

    Ok, so, as I mentioned earlier, each donut has just over 2g NET CARBS!

    But, here's the rest of the nutritional breakdown per donut:

    • 360 Calories
    • 34g Fat
    • 5.75g CARBS
    • 3.5g Fiber
    • 2.25g NET CARBS
    • 3g Protein

    If you're following a keto diet, starting your day with these macros will set you up for success.

    Low carb and high fat, it doesn't get much better than that as far as a keto meal goes.

    And there you have it. Donuts that have everything you want at this time of the year!

    Ingredients

    Scale

    Dry Ingredients:

    Just less than 1 ½ cups (150g) blanched almond flour

    1 Tbsp (5g) finely ground golden flaxseed meal

    1 heaping tablespoon (8g) unsweetened cocoa powder

    1 teaspoon baking powder

    1 ½ teaspoons cinnamon

    ½ teaspoon ginger powder

    ½ cup (100g) Brown Swerve

    Pinch of salt

    Wet Ingredients:

    2 eggs

    ⅓ cup (80mL) unsweetened almond milk

    ½ cup (113g) butter, melted  

    *Optional: 1 tablespoon (14g) Molasses - This will add 2 carbs per donut, but it gives them a more "authentic" taste.

    The Glaze: 

    ¼ cup (60mL) heavy cream

    1 Tsp (5g) pure vanilla extract

    1 cup (150g) Confectioners swerve

    Instructions

    1. Pre-heat your oven to 350° F.
    2. Add your dry ingredients together in a large mixing bowl, and mix until well combined.
    3. In a separate mixing bowl, combine the eggs and whisk them until the yolks and whites are combined.
    4. Then, add the melted butter, and whisk it together with the eggs.
    5. Now, alternate between adding the dry ingredients and almond milk to the wet ingredients - I like to do this in 2 batches.
    6. So, add in half of the dry ingredients, and mix. And then add in half of the almond milk, and mix.
    7. Then repeat that one more time, until a thick batter forms.
    8. Now, coat the donut tray with baking spray.
    9. Using a spoon, fill each of the slots ¾ of the way full.
    10. Bake the donuts for about 30 minutes. 
    11. Allow the donuts to completely cool in the pan before removing them. 
    12. To make the glaze, mix all the ingredients together until a smooth glaze forms.
    13. After the donuts have cooled, individually dip them into the glaze and cover the tops of each donut with any remaining glaze.
    14. Let the donuts finish drying on a cooling rack to let the glaze set and harden.

    Notes

    The scale up function only scales up the cups and not gram measurements. To scale up the grams, you have to do it yourself.

      Could I put cocoa powder in and make these chocolate? I just want a chocolate donut. I did make your Apple Cider donuts and they were amazing! I useduse allulose, because that is what I had. I had to chase my kids out of my donuts. I had bought some regular apple cider donuts at the store and the ones I made with your recipe were so much better tasting and smelling.
