    Keto Shrimp Scampi Made In Just 5 Minutes

    This keto shrimp scampi is made with a flavorful lemon garlic butter sauce and one of the best keto pasta options out there. It's a mighty tasty dish that's super easy to make, and it's done in just about 5 minutes!

    THE BEST KETO SHRIMP SCAMPI

    If you've been looking for keto shrimp recipes, you've found the best one. I mean, quick and simple low carb keto dinner recipes don't get much better than shrimp scampi.

    And you can either serve it over zucchini noodles, this cauliflower rice, or these keto pasta noodles. My keto pasta noodles only take 10 minutes to make, and the entire dish will have just 4 NET CARBS if you pair it with this scampi.

    Now, I know this is going to sound a bit over the top, but I honestly think this low carb version tastes better than Red Lobster's shrimp scampi. And if you serve it with these keto cheddar bay biscuits, you'll feel like you're literally eating at the restaurant - but the meal will be low carb, of course.

    And that's really the best thing about this recipe - the fact that it's so low carb that is. This keto shrimp scampi clocks in at just 1 NET CARB per serving, so you can really eat a bunch of this stuff and stay on track with the keto diet.

    INGREDIENTS

    Ok, so all you'll need to make this keto shrimp scampi is a few pretty simple ingredients that you probably already have on hand.

    Here is what you'll need:

    • 1 Tbsp. Olive Oil
    • 4 Tbsps. Butter
    • 2 Lemon slices
    • 4 Large Garlic Cloves, Minced (or 1 ½ tbsps. minced garlic)
    • 1 Pound Large Shrimps, Shelled
    • Salt and Fresh Ground Black Pepper
    • ¼ Cup chicken broth
    • 2 Tbsps. Lemon Juice
    • 1 Tbsp. Chopped Parsley

    Now, if you need to pick up any of these ingredients, make sure you also grab some mozzarella cheese, eggs, and xanthan gum if you don't have them. Those 3 ingredients are the only things you'll need to make my keto pasta!

    Also, if you have any leftover shrimp you can make my shrimp stir fry recipe next. If you serve it over my cauliflower rice recipe it is pretty low carb.

    USING FRESH OR FROZEN SHRIMP

    You can use either fresh or frozen shrimp for this recipe!

    Just keep in mind that fresh shrimp have already been thawed and are losing their freshness by the hour. So unless you're going to cook this scampi the day you buy the shrimp, I suggest using frozen shrimp.

    And if you use frozen shrimp, make sure you thaw them properly before getting into this recipe!

    HOW TO MAKE SHRIMP SCAMPI KETO

    The process of making this low carb scampi is beyond simple. It honestly might be the easiest dinner recipe you can make.

    And, as I've already mentioned, all it takes is about 5 minutes from start to finish. So saying this recipe comes in clutch when you need a quick meal is an understatement,

    Now get your ingredients together, and let's make some keto shrimp scampi!

    STEP 1: MAKING THE SHRIMP SCAMPI

    First, heat the olive oil and butter in a large skillet over medium-high heat.

    Then, once the butter has melted and the pan is hot, add the garlic and lemon slices and saute for 30 seconds - until fragrant. 

    Next, add the shrimp, season it with salt and pepper, and saute for 1-2 minutes on both sides.

    After that, add the broth, bring everything to a simmer, and cook for 2 minutes. Then give the scampi a good mix to coat the shrimp in the sauce and top with some lemon juice and parsley.

    STEP 2: SERVING

    Once the shrimp scampi is cooked, serve it over some zoodles, cauliflower rice, or keto pasta noodles. 

    And make sure to serve these keto cheddar bay biscuits on the side to complete the meal.

    STORING KETO SHRIMP SCAMPI

    This recipe will make about 3 servings of deliciousness - perfect for a family dinner! 

    But if you want to make more so everyone can grab seconds or even thirds, just double or triple the recipe!

    Then if you have any leftovers, you can put them in an airtight container and store them in the fridge for up to three days. 

    And what I love about this keto shrimp scampi is it tastes just as good - if not better - reheated. 

    Speaking of reheating, the best way to reheat it is to heat a little butter and olive oil in a skillet over medium-low heat for about 3 minutes. Then add the leftovers and heat until it reaches your desired temperature. 

    Or, for a quicker method, you can pop the leftovers in the microwave for a few seconds until warm.

    This keto shrimp scampi is easily one of the best keto shrimp recipes you can make. It is super flavorful, super low carb, and takes just a few minutes to complete.
