And the marinade for this pork loin tenderloin comes together in seconds, and it's so delicious. It coats the meat for an elevated savory flavor that slowly bakes into the pork as it cooks in the oven.

- 3 tablespoon olive oil
And for the pork loin roast marinade:
- 4 tablespoon balsamic vinegar
- 4 cloves of garlic
- ½ lemon zest
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper

How To Cook Pork Loin
Ok, so this roasted pork loin recipe only has a few easy steps and just takes a few minutes of active cooking from start to finish.
Then, all you have to do is wait for the pork loin tenderloin to roast up in the oven while you sit back and relax, or make a side dish.
So, get out your ingredients, and let's get cooking!
Step 1: Searing The Pork Loin
Before you begin, preheat the oven to 285 degrees Fahrenheit (140°C).
Then, put a cast-iron skillet - or roasting pan - on the stovetop over medium high heat and cover the surface with olive oil.
Now add the boneless pork loin to the skillet, and roast it for about 2 minutes on each side - or until it has a nicely browned exterior. And while it's roasting, you can make the marinade.
Step 2: Making The Pork Loin Roast Marinade
While the boneless pork loin is roasting, add all the pork loin roast marinade ingredients to a mortar and pestle - or blender - and combine these ingredients until a paste forms.
Then, when the pork loins are seared, coat them on all sides with the marinade.
Step 3: Roasting The Pork Loin
Now, put the marinated pork directly in the oven in the skillet or transfer it to a baking dish if your skillet isn't oven safe.
Bake the roast at 285°F (140°C) for around 50-60 minutes in a baking pan, and then increase the temperature to 340°F (170°C) for the next 15 minutes.
You can check the internal temperature of the center cut pork roast with a meat thermometer or instant read thermometer to make sure the internal temperature reaches 145°F.
When the time is up, turn the oven off, and leave the pork loin in it to cool slightly - just 5 to 10 minutes-ish should be enough.
Step 4: Serving
After it cools for a few minutes, take the roasted pork loin out of the oven and cut it into thin slices.
Then, serve the tender pork with some veggies, mashed potatoes, cauliflower mashed potatoes, or any side dish you made, and enjoy this absolutely delicious meal!

So, this pork roast recipe will make quite a few servings, depending on how big of a pork loin you get.
If you have leftovers, not to worry, you'll have dinner for the next few days! And it's delicious leftover since the flavors develop even more.
With that said, you can store the leftover pork loin in an airtight container in the refrigerator for up 3-4 days. Just make sure to put it in the fridge as soon as you're done eating - you don't want to let it cool too much on the counter.
Then either eat cold, or you can reheat the pork tenderloin whenever you're ready for it.
Reheating pork loin
Now, to reheat your leftovers, two methods work best.
If you want to reheat slices, put a little olive oil and broth in a pan. Then, turn it to medium-heat, and reheat the pork loin for about 5 minutes, flipping it every minute or so.
And if you want to reheat the entire pork roast, put it in a baking dish with some broth and cover it with tin foil. Then heat at 325°F (165°C) for about 30 minutes or until it reaches your desired temperature.

You want to cook this pork roast uncovered. If covered, it prevents the marinade from roasting into the meat and it turns out less juicy and flavorful.

I have found the best way to keep pork loin from drying out is by first searing it, and then baking it second. Just baking it at a high temperature from the get-go will dry it out - that is why this recipe cooks it at a low temperature for so long.
What temperature should a pork loin roast be cooked to?
You will want to make sure the internal temp is at least 145°F (63°C) when making pork loin. If you check the porks temp and it's not there yet, just pop it back in the oven until it reaches 145°F.
