Keto Creme Brulee Made With 3 Ingredients

Published: May 22, 2022 · By: Joe Duff

    Jump to Recipe

This keto creme brulee is made with 3 ingredients, but you'd think it was from a five-star restaurant! It's wonderfully sweet and creamy but it's low carb, sugar free, and gluten free. And it only has 1 NET CARB per serving!

    The Best Keto Creme Brulee

This keto creme brulee recipe is a quick and easy dessert that will have your family and friends thinking you picked it up from a high-end restaurant! It's seriously magic in a bowl.

Typically creme brulee is a super involved process requiring a bunch of steps and ingredients.

Well, this easy creme brulee uses only 3 ingredients, and it could not be any easier to make!

Not to mention, this keto creme brulee turns out so rich and creamy with a sweet vanilla flavor and signature caramelized top.

Honestly, I can't get enough of this keto custard like dessert when I'm in the mood for something rich, smooth, and creamy.’

I think I might even like it better than my keto butter pecan ice cream and peanut butter ice cream. And those are two of my most popular keto ice cream recipes, so that's saying a lot.

A spoon with crème brûlée on it in a white ram again that is filled with crème brûlée.

    Ingredients

If you're a frequent keto baker - or have been following the keto diet for a while - you should have all these ingredients in your cupboard or freezer already.

The three ingredients you will need are:

    • 1 cup vanilla ice cream (I used Halo Top)
    • 2 egg yolks
    • 2 tablespoons granulated erythritol

For the sweetener, I used granular swerve, but you can use any monk fruit or erythritol sweetener that you want!

Also, I used the vanilla bean keto Halo Top for the ice cream, but you can use any keto friendly ice cream that you want.

And if you have to go to the store to grab some ice cream, I'd pick up a few extra pints. You can always use it to top off a warm keto chocolate chip cookie or a warm keto brownie.

A few scoops of ice cream in a bowl, and egg yolk in a bowl, and sugar and part of a ball on a white counter.

How to Make Keto Creme Brulee

This keto creme brulee recipe gives you all the satisfaction with none of the fuss of making a traditional creme brulee from scratch.

As I mentioned before, this recipe uses ice cream as the creamy base to create this easy creme brulee, so you don't have to mess around and waste time making custard in a pot on the stove.

Also, the only special equipment you'll need is a small kitchen blow torch. But if you don't have one, I'll tell you how to caramelize the top with no torch!

Now, grab the ingredients, and let's get baking!

A bowl of melted ice cream and a bowl of an egg yolk on a white counter.

    Step 1: Prep Work

Start by preheating the oven to 325°F (160°C) so it’s ready for later.

Then, scoop a cup of ice cream into a microwave-safe bowl and microwave for about 20 seconds, or until it melts.

Step 2: Making The Creme Brulee

Next, add the egg yolks to the bowl, and mix well to combine them completely with the ice cream. The mixture should be nice and smooth.

Now pour half of the mixture into 2 ramekins or oven-safe bowls.

Step 3: Baking The Creme Brulee

Transfer the ramekins to a baking dish filled with hot water. The water should not cover the entire ramekins - there just needs to be enough to cover the bottom of them.

Next, bake the creme brulee for about 45-50 minutes. You'll know it is done when the outside sets, but it is still soft in the middle.

After they're baked, let the low carb creme brulee cool. Then, sprinkle the granulated erythritol on top and melt it with a blow torch.

And if you don't have a blow torch, put the creme brulee back on a baking sheet and broil on high until the top of the creme brulee turns golden brown. Make sure to keep an eye on them and check frequently - it will only take a minute or so to caramelize.

Finally, grab a spoon, crack the sugary top, and dig in!

    How To Store Creme Brulee

So, as I mentioned, this keto creme brulee recipe will make 2 servings. And it's impossible not to eat the entire serving in one sitting. Honestly, I make both servings for just myself!

If you want to make some extra for dessert the next night, you can store the low carb creme brulee in the ramekin it baked in. Cover it tightly with plastic wrap and refrigerate for up to 4 days.

Keep in mind that if you are storing it to eat the next day, do not caramelize the top! It will become soft and soggy in the fridge and ruin the dessert. You'll want to caramelize it right before you plan on eating it.

    Wrapping It Up

Well, that is how to make keto creme brulee with ice cream and egg yolks.

Who would have thought that only two ingredients could make such a delicious and easy creme brulee?

This clever little recipe lets you indulge in a luxurious dessert while still keeping it keto friendly. And it's guaranteed to impress all of your friends and family. They won't have a clue that it's a low carb sugar free creme brulee!

Anyway, I hope you enjoy this healthy creme brulee as much as I do. If you make it, leave a comment below, and let me know your thoughts.
