You're going to have a hard time believing each one only has 1.5 NET CARBS! Seriously, these taste just like the high carb, high sugar macaroons, and everyone who tries these will have no clue they're keto.
Along with preparing yourself for the addictive taste of this delicious treat, get ready to be blown away by how easy these low carb macaroon cookies are to make!
They literally take seconds to prepare, and bake in just 20 minutes!
INGREDIENTS
If you're a fan of coconut and are a frequent keto baker, I guarantee you already have some (if not all) of the ingredients below.
And you'll only need 5 ingredients to make this keto coconut macaroons recipe!
Here they are:
- 1 Large Egg
- ¾ Cup Full Fat Coconut Milk
- 1 ¼ Cups Finely Shredded Coconut, Unsweetened
- ⅓ Cup Granular Swerve
- 3 Tbsps Coconut Flour
And if you want to add the optional Chocolate Glaze:
- 2 Heaping Tbsps Keto Chocolate Chips
- 1 tablespoon Ghee or Butter
If you need any coconut flour, make sure to stock up because you can put it to good use by making these keto brownies, keto pancakes, or keto donuts next. All of them are also gluten free, super low in carbs, and perfect for the keto diet.
TURNING THESE MACAROONS SUGAR FREE
So, this recipe will make sugar-free macaroons. And in order to do that, we will be using granulated erythritol and keto chocolate chips with no sugar added to them.
My favorite granulated erythritol to use is Granular Swerve, but you can also use Lakanto's Monkfruit Sweetener. Both are 0 calorie, 0 carb sweeteners with the same amount of sweetness as sugar.
Now, for the chocolate chips, I like to use Lily's Semi-Sweet Chocolate Chips. They are low carb, sugar-free, and totally keto-friendly.
But you can also use the chocolate chips from ChocZero - they are also great for keto recipes.
Oh, and make sure you use unsweetened shredded coconut.
HOW TO MAKE KETO MACAROONS
If you've never tried to make coconut macaroons before, you may feel intimidated at the thought. But I have great news - this macaroons recipe is one of the easiest keto cookie recipes you can make!
All you need to do is mix all the ingredients in one large bowl, place the batter on a baking sheet, and bake for only 20 minutes.
And if you're making the optional chocolate glaze, it takes seconds to make.
Now let's get to the recipe!
STEP 1: MAKING THE BATTER
First things first, preheat your oven to 350℉ (177℃).
Then add all five of your macaroon ingredients - egg, coconut milk, shredded coconut, granular swerve, and coconut flour - to a large bowl.
Next, mix your ingredients well until a thick and wet batter forms. And if your batter is too wet, just add an extra tablespoon of coconut flour to thicken it up.
STEP 2: BAKING THE MACAROONS
Now, line a baking sheet with parchment paper.
Then with a cookie scooper, scoop 15 equal-sized balls of the macaroon batter onto the sheet.
Next, put your tray in the oven and bake your keto cookies for about 20 minutes.
You'll want to set your baking timer for 20 minutes but keep an eye on them - if the tops turn golden brown before your timer goes off, they are done, and you can pull them out of the oven.
Lastly, let them cool on the tray while you make the chocolate glaze.
STEP 3: ADDING THE CHOCOLATE GLAZE
So, while your macaroons are cooling, you can whip up the chocolate glaze.
First, put your keto chocolate chips and ghee in a microwave-safe bowl and microwave for about 30 seconds.
Then take your bowl out and stir your melted chocolate chips and ghee with a spatula until combined and a chocolate sauce forms.
After a sauce forms and your coconut macaroons are cooled, drizzle as much chocolate sauce as you want over each macaroon. Or you can dip the bottomsof your macaroons in the chocolate.
Then just refrigerate for about 10 minutes until the chocolate sets and enjoy!
STORING YOUR KETO MACAROONS
As you know by now, this recipe makes 15 deliciously addictive macaroons.
If anyone else is in the kitchen after you make them, there might not be any left!
But if you get lucky, and there are, you can store your macaroons in an airtight container at room temperature or in the fridge for up to 7 days.
And if you want to keep them even longer, just put them in a freezer-safe bag, and they will last in the freezer for up to 3 months.

Macaroons vs Macarons - Is there a difference?
Yes, there is!
Macaroons ("mack-ah-ROON") are more like dollops of cookie batter with a coconut texture. And shredded coconut is actually used as the main ingredient!
Macarons ("mack-ah-ROHN") are like sandwich cookie treats with a creamy filling in the middle of them - you'll typically see macarons in every color of the rainbow. And macarons are made with flour as the main ingredient.
Is coconut keto-friendly?
Coconut - the meat anyways - is one of the few fruits that is, in fact, keto-friendly! This is because of its low-sugar and high-fat content, making it an ideal keto ingredient!
Just note that coconut water is not keto-friendly since it contains sugar/carbs.
Are coconut macaroons keto-friendly?
Classic coconut macaroons are made with all-purpose flour, which of course, is not low in carbs. But these macaroons use coconut flour and only have 1.5 NET CARBS each, so they are perfect for the keto diet.
And by using coconut flour, it makes these gluten free macaroons too!

Ingredients
Macaroons:
1 Large Egg
¾ Cup (200mL) Full Fat Coconut Milk
1 ¼ Cups (113g) Finely Shredded Unsweeetened Coconut
⅓ Cup (60g) Granular Swerve
3 Tbsps (21g) Coconut Flour
Chocolate Glaze:
2 Heaping Tbsps (28g) Keto Chocolate Chips
1 Tbsp (5g) Ghee or Butter
Instructions
- Preheat oven to 350°F (180°C).
- In a large bowl, mix all of the macaroon ingredients until a thick, wet batter forms. If too wet, add 1 tablespoon of coconut flour to thicken it up.
- Line a baking sheet with parchment paper. Use a cookie scoop to make 15 equal-sized cookies and place them on the baking sheet.
- Bake for about 20 minutes or until the tops turn golden brown. Cool the macaroons on the tray and make the chocolate glaze.
- Put chocolate chips and ghee in a microwave-safe bowl and microwave for 30 seconds. Stir together with a spatula until a sauce forms.
- Drizzle chocolate over the cooled macaroons, or dip the bottoms of the macaroons in the chocolate.
