The Best Cast Iron Steak
If you haven't already been using your cast iron skillet to cook steak, you're missing out. Cooking steak in a cast iron skillet is the best way to keep it super juicy inside while also giving it a caramelized sear on the outside. Honestly, after you take your first bite, you'll honestly never want to cook a steak any other way again!
Plus, as I already said, it is beyond easy to make too.
I think you'll be surprised by just how effortless it is to cook the perfect steak. You basically just heat your cast iron skillet up with a little oil, cook your steaks in it, then finish 'em off with a little butter and fresh herbs. Honestly, the steak practically cooks itself with this method - you barely have to do a thing.
Sounds pretty great, right?!
By the way, since the majority of this recipe is passive cooking, you'll have plenty of time to whip up some tasty sides to go with it. So, if you're thinking about what to eat with cast iron steak, a few of my favorite recipes to make to go with it are these air fryer brussel sprouts, this sauteed asparagus recipe, these sauteed shiitake mushrooms, and this sauteed zucchini.
Ingredients
The ingredient list for this cast iron steak recipe is super simple since it's really the preparation of the steak that makes it shine. Honestly, I'm willing to bet you already have most - if not all - of the ingredients you'll need to make it on hand already!
Anyway, here's everything you'll need:
- 2 sirloin steaks
- 1 tablespoon avocado oil
- Salt and pepper, to taste
- 2 tablespoon butter
- 2 sprigs of fresh rosemary
- 2 cloves garlic, crushed
Not bad, eh?!
Now, when it comes to the cut of steak to use for this recipe, my go-to is sirloin steak. But with that said, this recipe works really well with any steak, such as a New York strip steak or ribeye steak.

How To Make Cast Iron Steak
Now it's time for the fun part - making the cast iron steaks!
As I mentioned before, this recipe couldn't be any easier to make. It'll take you no more than 15 minutes to bring it all together, and almost all of that time is spent letting the steaks cook in the skillet.
Anyway, let's stop wasting time and get cooking!
Step 1: Season The Steaks
First, if the steaks are in the refrigerator, you'll want to pull them out and let them come to as close to room temperature as possible before you cook them. This will help ensure they cook more evenly.
Then, once you've let them come up to temp, you can pat the steaks dry with paper towels and season them to taste with a little kosher salt and freshly ground black pepper.
Step 2: Cook The Steaks
Once you've seasoned the steaks, you'll want to heat the avocado oil in your cast iron skillet over medium-high heat.
Then, when the oil is hot, you can place the steaks into the hot cast iron skillet and cook 'em for about 4 minutes per side - pro tip: don't move them while they cook.
Step 3: Baste The Steaks
After that amount of time's up, you'll want to reduce the heat to medium-low and add the butter, garlic, and rosemary to the skillet.
Then once the butter has melted, you can spoon the melted butter over the steaks continuously until the steak reaches your preferred level of doneness. For a medium rare steak, you can use a meat thermometer and check for an internal temperature between 130°-140°F.
For what it's worth, I like to pull the steaks off at about 125°F and then let them rest up to that medium rare internal temp. It works like a charm to get them to turn out perfect every time.
Step 4: Rest And Serve
Once you've cooked the steaks to your desired doneness, you'll want to take them out of the cast iron skillet and transfer them to a plate to let the steak rest for 5 minutes before serving. This will lock in all of the juices and help the flavors of the steak develop.
Anyway, as soon as the time is up, you can serve the steak warm with any sides that you want.
Enjoy!
How To Store Sirloin Steak
This recipe for cast iron steak makes 2 servings, so it should be just enough for your next date night or dinner for two. That said, it's super easy to double up on this recipe if you want to make it for a family dinner.
If you happen to end up with leftovers, you can store the cooked steak in an airtight container, and it'll stay good in the fridge for up to 3-4 days.
Alternatively, if you want your steak to last even longer, you can freeze it in a freezer-safe bag for up to 3 months.
How To Reheat Sirloin Steak
When you're ready to enjoy your leftover steak, you can either eat it cold right out of the fridge, or you can reheat it. It's especially great cold on a salad or in a wrap.
With that said, if you'd like to warm your steak back up, I've found the best way to reheat it - without drying it out - is in the oven. So, to do that, just transfer your steak to a wire rack lined baking sheet and reheat it at 300°F for about 10-15 minutes - or until it reaches your desired temperature.
